Mokpo Hadang gabrisal bossam with free tray noodles: Bak Man-bae

In short

Bak Man-bae Arirang Bossam Mokpo Hadang Branch is a bossam (boiled pork wrap) restaurant in the alley next to Mokpo Christian Hospital, specialising in gabrisal (pork shoulder blade cut). On this visit the half-and-half bossam came with jaengban guksu (cold tray noodles) as the free noodle choice, and the gabrisal's balance of fat and lean meat kept every slice moist to the last bite. With a generous self-serve station and a dessert corner, Bak Man-bae Arirang Bossam earned a second trip after the first one won us over.

Today I'm sharing an honest review of Bak Man-bae Arirang Bossam Mokpo Hadang Branch, a place in Mokpo's Hadang neighborhood famous for its soft, juicy bossam (boiled pork wrap).

When people think bossam, most picture pork belly or pork neck, but this place actually uses gabrisal (pork shoulder blade meat) for their bossam. I came here once before, loved it, and this is my repeat visit haha.

Menu board at Bak Man-bae Arirang Bossam Mokpo Hadang Branch

The menu: half-and-half, kimchi and cabbage bossam

The biggest appeal of Bak Man-bae Arirang Bossam is the flexibility to mix and match your bossam.

  • Half-and-half bossam (cabbage + bossam kimchi): the signature dish! Lets you enjoy both pickled cabbage and sweet-spicy bossam kimchi
  • Kimchi bossam / cabbage bossam: choose based on preference for more kimchi or more cabbage

I couldn't give up either the pickled cabbage or the bossam kimchi, so I ordered the 'half-and-half bossam'! You can also choose a free side of chogye guksu (chilled chicken noodles), kalguksu (knife-cut noodles), or jaengban guksu (tray noodles) — I went with the tray noodles. Bossam really calls for tray noodles 👍 You can also choose whether to eat the free noodles right away or later, so keep that in mind~~

They also accept high oil price relief vouchers, so if you still have some left, run over right now!!!

Aprons provided at the restaurant

Aprons — a must for people like me who spill everything while eating!! They're stocked all over the place, which I love.

Another thing Bak Man-bae Arirang Bossam is proud of is the self-serve corner! Usually at bossam restaurants, the fresh lettuce, perilla leaves, garlic, and peppers run low and you feel awkward asking for refills, right? Here the self-serve station is neatly stocked, so you can help yourself to as much as you want without feeling bad about it.

What does gabrisal bossam actually taste like?

A glossy plate of gabrisal bossam

Finally, the gabrisal bossam arrived! Can you see the sheen on the meat? Bossam pork usually turns dry after sitting for a while, but thanks to gabrisal's well-balanced fat-to-lean ratio, it stayed truly moist and tender until the very end. No gamey smell at all, and it just melted in my mouth...👍

Mumallaengi (dried radish strips), kimchi, and pickled cabbage come out too, so pair them however you like~~~

My personal favorite combo is the sweet mumallaengi..😋

The free tray noodles served with the meal

And then the tray noodles arrived! The sweet-and-tangy special sauce soaked nicely into the chewy, springy noodles and the crisp, hearty vegetables — the perfect combo to cut through the greasy richness of the bossam!!!! I strongly recommend ordering this as an essential side whenever you order bossam 👍👍👍👍

Dessert corner: coffee, misugaru slushie and puffed corn

After finishing a filling meal, a thoughtfully set up dessert corner waits on your way out. There's a coffee machine, essential after any meal, plus a chilled misugaru (roasted grain powder) slushie! And that's not all — there's also roasted corn and ppeongtwigi (puffed rice snack) for a nostalgic dessert touch.

I think this part would satisfy not just younger visitors but older folks too. Highly recommend it for family gatherings!! A truly satisfying meal to the very end.

If you're looking for a proper bossam restaurant in Mokpo's Hadang area, I strongly recommend Bak Man-bae Arirang Bossam without hesitation! From the tender meat texture to the generous kimchi spread, the comfortable self-serve corner, and the dessert corner — everything was perfect. I'm planning to come back with my family again soon! Enjoy a hearty meal with delicious gabrisal bossam too! ❤️
