Makchang lovers, take note! This time I visited Bulmak Yeolsam Sajik (불막열삼 사직점) in Sajik-dong, Dongnae-gu, Busan. It is close to Sajik Baseball Stadium, so it is in a great spot for a meal or drinks before or after a game. And it is not just one good menu item—there is everything from fresh makchang and spicy makchang to all kinds of meat!

What kind of place is Bulmak Yeolsam?

One feature of Bulmak Yeolsam is that you can enjoy makchang (pork large intestine) alongside a variety of meats. Their signature fresh makchang is said to undergo a secret 48-hour aging process. They say the aging removes unwanted odors while bringing out its savory flavor, then it is par-grilled to the ideal point as soon as you order. That means when you finish grilling it yourself, you get a crisp outside and chewy interior.

Fresh Korean pork belly is another signature menu item, not just makchang. It is finely scored so the juices stay in the meat as it cooks. If you love pork belly, I think it would be nice to order that too. There are also lots of other meats, including frozen pork belly, chewy pork cuts, and king galbi, so you can choose according to your taste.

Bulmak Yeolsam Sajik is at 17-40 Sajik-dong, Dongnae-gu, Busan. It is a Sajik-dong restaurant close to Sajik Baseball Stadium, making it easy to stop by when you are there for a game! Head straight from Sajik Sports Complex toward Sajik-dong Market and it is across from Seokpo Royal Castle. It is right on the road, easy enough to find, and the sign stands out well. If you are looking for somewhere to eat near Sajik Baseball Stadium, this is a location worth remembering haha.

Parking info for those driving! Use Myeongseong Parking Lot at the market entrance in the alley across from the restaurant. They contribute ₩3,000 toward one hour of parking there. The lot is quite close to the restaurant, so driving over was fine. Parking is especially something to think about in Sajik-dong on game days, so the parking support is pretty convenient!

The restaurant is on the roadside, so it was not difficult to find. You will spot it as you come up from Sajik Sports Complex toward Sajik-dong Market, across from Seokpo Royal Castle. A Bulmak Yeolsam sign and menu information are displayed out front, so it is easy to see what they sell while passing by. If you are looking for makchang or pork belly near Sajik Baseball Stadium, it is a place to keep an eye on.

Once inside, the restaurant was more spacious than I expected.

The tables were comfortably spaced too, so it looked good for a meal with friends or a larger group! There were six round tables in the center and about five square floor-seating tables along the wall. At the back was a separate private area with two more round tables! With the space divided up, it seemed well suited to family dinners, friend gatherings, or work get-togethers. Apparently, lots of groups do come here for gatherings and company dinners 👍🏻 The tables were not cramped together, which was comfortable!

Then they brought tofu, stir-fried kimchi, pickled radish wraps, garlic, ssamjang, fresh-seasoned lettuce, four kinds of makchang sauce, and pickled onions :)

I love makchang, so I thought we should do it properly from the start and ordered two servings each of fresh makchang and spicy makchang. It was such a good choice in the end!! 🫶 They were both so delicious that I think I would have regretted choosing only one haha.

48-hour-aged fresh makchang

First, the fresh makchang!

Bulmak Yeolsam's fresh makchang is aged with their secret method for 48 hours, then served par-grilled! It was not completely raw from the start but already partially grilled, which made it easy to eat haha.

As it browned on the grill, that distinctive savory makchang aroma rose up... and I already knew it would be good haha. I took a bite of the nicely cooked fresh makchang: the outside was chewy and the inside had that pleasantly springy texture! That texture is exactly why I love makchang, and it was totally my style 💕 Its distinctive nutty flavor came through clearly, and it was clean with no unpleasant odor. Most of all, I loved that springy chew the more I chewed itㅠ

Bulmakchang is fairly spicy, so keep that in mind if you do not handle spicy food well.

The spicy seasoning soaked nicely into the makchang, so the heat hits first in each bite, followed by its nutty flavor and springy texture. Spicy + chewy + savory—this combination was really good!

Part of the fun of makchang is dipping it in sauces. When you order makchang, several sauces come with it. Makchang is delicious on its own, but switching between different sauces made it taste different again?!

Each sauce changed the flavor slightly, so I could keep eating without getting tired of it. We took turns dipping in the different sauces and enjoyed it haha. First taste the savory makchang itself, then dip it in sauce, then go back to spicy makchang, then take a sip of beer haha.

And the menu item that was unexpectedly satisfying that day! It was the grilled cheese.

I put the cheese on the grill, browned it nicely, and dipped it right into the condensed milk... this is seriously a specialty! The grilled cheese was golden and savory on the outside, while the inside kept its chewy texture. With the sweet condensed milk added, that savory + sweet combination was so good.

Makchang with grilled cheese... 🫶 In particular, having a piece of spicy bulmakchang with grilled cheese worked so well because the cheese's savory, soft flavor slightly mellowed the heat. The spice of bulmakchang and the richness of grilled cheese go together beautifully~ Not great with spicy food? Then I recommend the bulmakchang + grilled cheese combination even more haha.

For before or after baseball, and group gatherings

It would be great to have a filling meal before heading into a game at Sajik Baseball Stadium, or to come out afterward and have a beer with friends while talking baseball. Since it stays open late, it is especially useful for anyone looking for a place to eat after the game. Fill up on makchang and meat before the game, then have a beer afterward and chat about that day's game—sounds perfect, right? ⚾🍺

The restaurant itself is quite spacious, with both floor seating and round tables, so it was fine for several people to visit together. Beyond makchang, there are many meat options including fresh pork belly, chewy pork cuts, king galbi, and beef brisket, which is a plus when everyone wants something different.

According to the current information, it is open every day from 16:00 until 02:00 the following day. So it seems good not only for dinner, but also for a late meal or drinks after a baseball game. It can get pretty late after seeing a game at Sajik Baseball Stadium, and being open until 2 a.m. makes the restaurant especially useful for that.

Final thoughts

If you love makchang in Busan, this is a place worth visiting. You can choose from 48-hour-aged fresh makchang to spicy bulmakchang according to your taste, and there are plenty of other meat and meal options too. Most importantly, both the fresh makchang and spicy makchang I tried were really delicious.

The makchang here is seriously delicious.

The fresh makchang was savory and springy, the bulmakchang was spicy with a nice chewy texture, and the grilled cheese dipped in condensed milk was a real treat. Add a beer, and it made for such a proper dinner haha. If you love grilled cheese like I do, definitely order it too. Grilled cheese dipped in condensed milk + makchang was honestly much more delicious than I expected.
