I love baked pastries, so I tend to hunt down good dessert shops. (ᐡ ɞ̴̶̷ ̫ ᴗ̤ ᐡ₎ ᯤ ♡ This time I found Fluffy Bake Shop near Gongdeok Station. I was especially curious about their gamtae (seaweed) financier, which was featured on the TV show Nolto TV, but visiting in person I found they also had madeleines, financiers, salt bread, canelés, and egg tarts — such a wide variety! If you're a fellow pastry lover like me, this is a great Gongdeok Station dessert spot to check out!

It's right by Exit 2 of Gongdeok Station, so getting there by public transit was easy. I visited right at weekday opening time, and there were already customers picking out desserts.

A good pastry shop always has industrious customers showing up early!! [me included, a total bread-fiend..❤] The sign outside had a cute little madeleine drawing on it, giving off a cozy, homey feel. Once inside, there are tongs and trays right at the entrance so you can pick and pack whatever you want yourself!

True to a pastry shop, the whole place had a warm, comfortable feel, and there was a small seating area on one side where you could enjoy dessert with coffee.

What I really liked was how many packaging options there were! Fluffy Bake Shop has everything from a 4-cup pulp lunchbox to 6-cup and 15-cup shopping bag boxes, so it's great for picking several kinds to give as gifts.

I also added the ₩2,500 shopping bag that day — the green packaging was so cute.

Once the pastries were packed in, the whole vibe was completely different from just tossing them in a paper bag — it felt like proper gift material. It seemed great for lightly packing an assortment for a friend's birthday, a housewarming, or office snacks. They said bulk orders are also possible for corporate meeting snacks, school events, or group gifts if you inquire at the store.

Fluffy Bake Shop bakes its pastries and salt bread in-house, and apparently offers a whopping 16 kinds of madeleines, 9 financiers, and 3 canelés. Standing at the display case, it's genuinely hard to pick just one.

The flavor combinations were incredibly varied too — matcha, hwangchiju cheese, lemon, Nutella, chocolate, black sesame, Earl Grey, yuzu, raspberry, carrot, chestnut, and more.

The financiers were just as full of character — vanilla, chocolate, fig, apple churro, walnut caramel, gamtae (seaweed), and more. After much deliberation, I picked six pastries in total that day.

How to store the baked treats, and how long they keep

  • 🍪 Madeleines — Keep in a cool place for 2–3 days. Sealed and frozen, they last 2 weeks. If frozen, thaw for about 30 minutes to 1 hour before eating.
  • 🧈 Financiers — Keep in a cool place for 2–3 days. Sealed and frozen, they last 2 weeks. If frozen, thaw for 30 minutes to 1 hour, then bake at 160°C for 3–5 minutes in an oven or air fryer before eating. Eating them frozen ('eol-meok') is also recommended.
  • 🥐 Canelés — Sealed and frozen, they last about 2 weeks. If frozen, thaw for 30 minutes to 1 hour, then heat at 160°C for 10–15 minutes in an oven or air fryer before eating.
  • Everything tastes best the day you buy it — the sooner you eat it, the better :)

1. Gamtae (seaweed) financier, 3,400 won

The first thing I tried was the gamtae (seaweed) financier. Since it was the item featured on TV, it was the one I was most curious about. They cut gamtae and lay it on top, sprinkle it generously with Guérande salt, bake it, then finish it off with a brush of sesame oil for a savory finish.

With the seaweed on top, it looks completely different from a typical sweet financier. The salty Guérande salt, the ocean tang of the gamtae, and the nuttiness of the sesame oil combine for a charm that's totally different from the usual all-sweet pastry. Recommended if you like savory-sweet combos in your baked goods!

2. Vanilla madeleine

Second was the vanilla madeleine. They brown French butter to bring out its deep flavor, then add vanilla bean for aroma. It's the type where the financier's rich, nutty butter flavor and the subtle sweetness of vanilla blend together, so it'll suit anyone who likes their pastries classic and true to basics.

I love flashy dessert toppings too, but I keep reaching for pastries where you can really taste the butter like this one. Eaten with coffee ★⌒(●ゝω・)b, I bet that nutty flavor comes through even more.

3. Hallabong citrus madeleine, 3,400 won

Third was the hallabong madeleine. It combines the madeleine's classic fluffy, soft texture with the refreshing citrus of hallabong, so it'll appeal to anyone looking for something bright amid all the sweet pastries.

Fluffy Bake Shop feels less like simply baking a single batter and more like combining ingredients to give each item its own character. That's what makes it fun to look at the display and wonder, 'What flavor is this one?' as you pick things out one by one.

4. Nutella madeleine, 3,500 won

If you're a chocolate lover, I highly recommend the Nutella madeleine~~ It's baked with hazelnuts and crystal sugar on top, then filled generously with Nutella inside and topped with a marshmallow. The name alone already sounds sweet haha.

There's a crisp baked exterior, and Nutella filling on the inside, so if you love chocolate desserts this one should satisfy. The added hazelnut flavor especially gives it a different kind of nuttiness than a plain chocolate madeleine.

5. Carrot madeleine, 3,400 won

And the carrot madeleine was just too cute! With a tiny carrot-shaped chocolate on top, it catches your eye right away. It's baked with carrot and pecan, then filled with yogurt cream cheese inside. The nutty flavor of carrot and pecan plus the yogurt cream cheese makes for a richer flavor profile than a typical madeleine.

Most of all, that carrot chocolate on top is so cute kids would love it. I actually saw kids spotting this cute dessert and begging their moms to buy it, so it seems like a good pick for a family visit too.

6. Chestnut madeleine, 3,600 won — the pick of the six

My favorite pick was!! the chestnut madeleine! There was an actual chestnut piece pressed right into the top, looking so delicious that I ended up grabbing one.

It had a rich, nutty sweetness that felt like autumn in a bite, and it hit my grandma-taste-buds right on target. Inside the madeleine is Mont Blanc cream, and on top is a sweet glazed chestnut (boneui-bam). The fluffy madeleine, the soft Mont Blanc cream, and the nutty sweet chestnut all came together for a really full flavor. Eating the chestnut on top along with it really brings out that distinct chestnut nuttiness.

Out of the six, the chestnut madeleine was hands-down my favorite. It wasn't even on my original plan — I picked it purely based on looks, and it totally paid off..🌰

Salt bread, egg tarts and canelés at Fluffy Bake Shop

Besides madeleines and financiers, Fluffy Bake Shop also sells salt bread, egg tarts, and canelés. The salt bread in particular is baked with a crispy crust, so anyone who likes a crunchy texture would enjoy it. The inside also had a clearly visible butter cave from the melted butter, so it looked delicious too.

The egg tart had those layered, flaky edges with a moist center, making it a good pairing with coffee. And I heard the owner went through three whole notebooks of testing to perfect the canelé recipe, so you can really feel the care put into these pastries.

Why Fluffy Bake Shop is easy to mix and match a gift bag at

Looking around Fluffy Bake Shop, the biggest thing I appreciated was how many options there are. If you like sweet chocolate, go for Nutella or chocolate; if you like nutty flavors, black sesame or chestnut; if you like something refreshing, hallabong or lemon; and if you like a savory pastry, there's the gamtae financier! Since everyone can pick to their own taste, it seems great for sharing among a group.

Above all, out of the six I picked, the chestnut madeleine left the biggest impression, and getting to try the TV-featured gamtae financier in person made me — a fellow pastry lover — very happy..
