Worth noting: on weekends or whenever there's a wait, dining time is capped at 2 hours to keep the turnover moving for people who've traveled from far away.

Step inside and you're greeted by an open, comfortable space with upscale Japanese-restaurant-style interiors. Sake and premium liquor bottles are elegantly displayed along the top of one wall, giving the whole place a distinctly Japanese dining atmosphere.

The real draw at Geumrang Hoetjip is the romantic Gwangan Bridge view from the window seats. Through the huge picture windows, the blue Busan sea stretches out and the mighty Gwangan Bridge comes into full view.

The first thing served after ordering is the seafood sukkidashi assortment, and it's stunning just to look at. Set neatly amid colorful flower decorations are vivid orange sea squirt, crunchy sea cucumber, plump red shrimp, and chewy gaebul (spoon worm) — all packed with the flavor of the sea. Dip a bite in the vinegar-chili sauce and the ocean fragrance fills your mouth.

The full sukkidashi spread that follows is laid out so generously the table practically groans under it. Tangy boiled octopus salad, tender grilled abalone, savory corn cheese, cold mulhoe (chilled raw fish soup), salad, buckwheat soba, and steamed egg keep coming one after another. Thanks to the sheer variety and the care put into each dish, your mouth is already happy before the main sashimi even arrives.

At last, the main event — the premium mixed sashimi — arrives. Laid out cleanly on fine porcelain and stone, the sashimi looks fresh just from the presentation.

You get a variety of cuts from premium fish like flounder, red seabream, and sea bass, decorated in the shape of a red rose that makes you feel even more spoiled. Each piece is thick and chewy, with a savory umami that builds the more you chew. It really lives up to its reputation as a top Busan sashimi restaurant.

How to eat konowata (salted sea cucumber innards)

Here's how to enjoy konowata properly: dip a piece of sashimi generously in the konowata, set it on a sheet of gim (seaweed), then eat it together with pickled ginger, soy sauce, and a bit of sushi rice.

The warm dishes that follow the sashimi are excellent too. The tender fish steak comes topped with a savory cream sauce and sprouts, a lovely combination of flavors.

Served alongside is a braised fish dish, salty-sweet and seasoned right down to the flesh — perfect with rice. It pairs nicely with freshly fried, crispy corn fritters, best enjoyed hot.

You can choose between spicy maeuntang or the clear jiri broth. We went with the seodeori jirigaeng, brewed spicy and refreshing. The earthenware pot is packed with enoki mushrooms, perilla leaves, and crisp minari (water dropwort), giving the broth a clean, deep flavor. Simmering away, one sip warms you right through and wraps up the meal cleanly.
