Hubaldae is a grilled meat restaurant located in Jongno. It's famous as a hangout for baseball players, and I'd heard so many good reviews from people around me that I got curious. It's right at the entrance of the Jongno alley and within walking distance of Jungangno Station, so the access was great ₊⁺♡₊⁺

I visited on a weekday at 6pm and the inside was almost fully booked • • 🫢 To prepare for the wait, I made a Naver Place pre-waitlist reservation, so I didn't wait long and got seated right on time.

Hubaldae's meat menu includes domestic 1+ grade Hanwoo Hwangto fresh pork neck, Hanwoo Hwangto fresh pork belly, Korean beef daechang (grilled), and New Zealand special beef tripe (grilled), while the side menu has cold noodles, special ramen, and special fried rice. There's also a corkage-free service 🍾 . . ♥

Mushrooms, sundae (Korean blood sausage), peppers, myeongi namul (wild garlic leaves), angelica leaves, basil, scallion salad, honey potato wraps, sesame oil sauce, wasabi, and ssamjang came out in a generous spread, perfect for pairing with the meat ₊˚⊹ᡣ𐭩

Cold noodle broth and kimchi jjagulli (braised kimchi stew) also came out as part of the basic spread. The kimchi jjagulli was nicely salty, great as a palate cleanser, and looked like it would go perfectly with the meat ♡⋆˚ʚɞ

I ordered two servings of Hanwoo Hwangto fresh pork belly (150g) and one serving of Korean beef daechang (150g) • • ! Being 1+ grade meat raised on domestic hwangto (red clay soil), the color alone looked different from the rest ᰔ₊𓂃🥩

Hubaldae is a place where the staff grill the meat from start to finish, so all you have to do is sit back and eat comfortably. The staff were also super kind ~♥︎⋆˖˖

They say the Hanwoo Hwangto fresh pork belly comes from 1+ grade female pigs aged for 168 hours. The ratio of lean meat to fat was perfect, and the crispy-outside-juicy-inside texture was clean and delicious .。•♥︎

It's also a perfect match with the kimchi used in the kimchi jjagulli . . ♥

The Korean beef daechang had that distinct juiciness spreading in your mouth, and the more you chewed, the more savory it got — amazing . . 🤤 Grilling vegetables and sundae alongside it added a clean freshness in between the rich, heavy flavor of the daechang, and the combination was great ˖⁺‧₊˚♡

As always, fried rice is the perfect way to finish off the meat. The special fried rice was loaded with meat and kimchi, fried up nice and fluffy — delicious. The final course was perfect too ˗ˏˋ ꒰ ♡ ꒱ ˎˊ˗
