Today I'm writing about a place near Sunae Station in Bundang that's become one of my regular spots — Haeseon. If you're searching for a sashimi restaurant in Bundang or looking up good eats near Sunae Station and considering an aged sashimi course, this post should help. Aged sashimi (sukseonghoe) has a completely different flavor from regular sashimi, so it's worth trying if you haven't yet.

Inside Haeseon: two floors and a live fish tank

Haeseon's space has a duplex structure, making it comfortable for both group dinners and dates. Walking in, you first see the live fish tank at the entrance, while the interior's clean wood tones and warm lighting create a calm mood.

The second floor feels a bit more private, so it was nice for quietly chatting over the meal.

Haeseon runs on a single menu. No agonizing over a menu board — it's simply "aged sashimi course, ₩40,000 per person." For that price you get a full spread: aged sashimi, live octopus, beef tartare, corn, grilled fish, fried food and spicy fish stew.

The aged sashimi that comes out first stands out for its thick, chewy texture. It's topped with flounder, red seabream, rockfish and more, and the umami really comes through without any fishiness. The aging process seems to have deepened the fish's flavor.

The live octopus had a lively, springy texture, and the beef tartare wasn't overpoweringly seasoned, so it paired well with the sashimi.

The grilled fish stood out for its crispy-outside, tender-inside texture. After eating just sashimi for a while, having the grilled fish in between really refreshed my appetite.

Fried dishes and maeuntang (spicy fish stew)

The fried food was crispy and not greasy, so it felt light, and the spicy fish stew had a spicy yet refreshing broth that was excellent. In particular, I ended up finishing a whole bowl of the stew before it was even turned into porridge at the end.

Do you need a reservation at Haeseon, and how fast does the course move?

Since Haeseon isn't a large space, it's better to book ahead. Especially on weekends or during group-dinner season, a reservation is essential if you want to avoid waiting. The pacing of the course was just right — I could enjoy it slowly without ever getting bored waiting for the next dish.
