Today I went to a barbecue restaurant in the Nohyeong-dong/Yeon-dong area near Jeju Airport, perfect for a stop at the start or end of a Jeju trip, where you can taste a truly unique breed of black pork!

As soon as we ordered, a neat and tidy spread of banchan (side dishes) filled the table, and every single one of them worked well to back up the umami of the meat!
There was a generous lineup: tangy scallion salad and geotjeori (fresh kimchi) to whet the appetite, crunchy pickled vegetables, savory corn salad, and even spicy-sweet seasoned crab.

In particular, the meljorim — a Jeju-style braised big anchovy stew served bubbling in a hot pot — was rich and deep without any fishiness, promising a fantastic match with the meat!

The moment I picked up a perfectly grilled piece of Nanchuk Matdon and ate it plain, without dipping it in anything, it was truly one surprise after another!
Compared to regular pork, the fat had an incomparably chewy, springy texture that was simply excellent.


With every bite, behind that firm resistance pushing back against my teeth, savory, deep juices trapped inside the tender meat burst out!
