Gyeongsan sushi restaurant wait times and parking: Sonsi Sushi Hayang
In short
Sonsi Sushi Hayang branch is an aged sushi restaurant in Hayang-eup, Gyeongsan, a 3-minute walk from Exit 1 of Hayang Station. Arriving at 6:20pm on a weekday, this visit meant putting a name down on Catch Table and waiting about an hour, then ordering the value set at ₩30,500 and the Sonsi ankimo futomaki at ₩12,000. With only 5 tables, a wait at mealtimes is part of the deal at Sonsi Sushi Hayang, but ₩1,000 in parking support at nearby lots makes driving over easy enough.

📍My nth visit to Sonsi Sushi Hayang branch
Sonsi Sushi Hayang branch is a Gyeongsan/Hayang Station favorite that opened a while back and I used to go to even more often. I used to order takeout a lot because the kids loved it. Now the menu items the kids liked are gone...
I've stopped by a few times since the remodel too (it seems like the 2nd floor isn't being used anymore). It's become an even cleaner-looking Sonsi Sushi.

How long is the weekday evening wait at Sonsi Sushi Hayang?
Since Sonsi Sushi Hayang branch is only a 3-minute walk from Hayang Station, it's close by and gets a lot of visitors from Daegu Catholic University, Kyungil University, and Hosan University students as well as office workers, so there's always a wait. The exterior also had a clean look.

After the remodel, the stairs to the 2nd floor were moved outside, which made the main hall feel a bit narrower. There are 5 tables, plus a separate table for solo dining. I went on a weekday at 6:20pm and the wait was an hour! Luckily 3 parties in front of me cancelled, so I got seated right away. (You should expect to wait during lunch and dinner hours.)

The interior is compact-sized and had a lot of events going on. There's also a table available for solo dining.
On one side, there was a Naver review gacha draw event you could take part in. There were also etiquette items available so you could use the space comfortably.

Gyeongsan favorite Sonsi Sushi Hayang branch uses fresh olive flounder from Wando and Norwegian salmon, aged using the Japanese konbu-jime technique, which I think maximizes the umami of the fish and makes it even tastier.
Sonsi Sushi Hayang menu and prices
Sonsi Sushi Hayang branch has a lunch special along with set menus, individual dishes, and various other menu items. The lunch special can be ordered from 11:30 to 13:30.

- Aged sushi (small) 8pc ₩12,500
- Aged sushi (medium) 10pc ₩15,800
- Aged sushi (premium) 12pc ₩18,500
- Value set ₩30,500

The menu board is easy to read at a glance, and there's also a kiosk at the table, so you can use whichever is more convenient.

What comes in the ₩30,500 value set
The value set is ₩30,500 and comes with 12 pieces of aged sushi, bonito udon, aged chojang sashimi bowl, and homemade-sauce fried shrimp, all together.

The value set had the advantage of letting you try a variety of dishes.

Sonsi ankimo futomaki for ₩12,000
The Sonsi ankimo futomaki (monkfish liver hand roll) is ₩12,000. It's Sonsi Sushi's signature roll, combining rich ankimo with a subtle smoky flavor.

It was so big it barely fit in one bite, so it gave a nice sense of fullness.

Cucumber added into the ankimo gave it some moisture and a refreshing taste too.
Aged chojang sashimi rice bowl, fried shrimp and how the aged sushi tastes
The aged chojang sashimi bowl (jeohjang hoedeopbap) included in the value set was packed with the vegetables and salmon that go into a sashimi bowl, and eating it with the aged chojang sauce and fragrant sesame oil was delicious.

The fried shrimp also came with 4 pieces, which was just right for two people to share, and the homemade sauce was tasty too.

Because the sushi is aged, it had a chewy texture with absolutely no fishy taste.
