What is mala kaoyu?
Mala tang and mala xiangguo are familiar, but what is mala kaoyu? Just hearing the name, I couldn't quite picture the taste, so this time I went to try it myself at Bantiannyao Kaoyu Daejeon Branch in Dunsan-dong, Seo-gu, Daejeon.
To cut to the conclusion, if you like the distinctive aroma and flavor of mala, this is a dish where picking your own ingredients is part of the fun, and adding the vegetable-mushroom topping worked really well for me.

And once I actually visited, I found there was just as much useful info about parking, the self bar, notification coupons, and review events as there was about the food itself. How long does mala kaoyu take after ordering?

After sitting down and choosing from the menu, I ordered the mala kaoyu. I picked the basic Shin Ramyun spice level, and since only ningbo fish was available that day, I chose ningbo.

I added the vegetable-mushroom topping to the base dish. What surprisingly stuck with me was how long the food took to arrive — it felt like about 15 minutes after ordering. While waiting, I looked at the menu photos and grabbed some sauces from the self bar.
What mala kaoyu at Shin Ramyun spice level tastes like
The first bite hit me with that distinctive mala spice flavor. If you like the familiar mala taste from mala tang or mala xiangguo, this won't feel unfamiliar at all. I'd added the vegetable-mushroom topping, and that choice turned out pretty great.

The mushrooms soaked up the seasoning and had a chewy bite, while the vegetables added different textures in between, making it more fun than eating one flavor the whole time. Personally, with mala dishes I find it more enjoyable to pick a little of this and that rather than focusing on just one ingredient from the start.

The spice level wasn't overwhelming — it was a pleasantly spicy taste. Once the hourglass on the table runs out, you can start eating right away. There was a lot of fish and it was really soft. No fishy taste at all, and it went well with the sauce, which made it delicious. The staff were friendly and even explained which parts were the tastiest, so I had a good meal overall.
Cucumber salad to cool down the mala spice
For this visit, I got cucumber salad through the review event. When eating something with a strong aroma like mala, I like having something crisp and refreshing on the side, and the cucumber salad played that role well.

Taking a bite of mala, then a little cucumber salad, changes the feeling in your mouth and makes you want to go back for more mala — that kind of combo. Review events can vary depending on when you visit, so check before you go.

The self bar at Bantiannyao costs 2,000 won

I paid an extra ₩2,000 to use the self bar too. I think the self bar will split people into two camps. If you're the type who likes to grab what you need yourself during a meal, it's convenient to use; if you're the type who just wants a simple meal and to leave, you probably don't need to add it.

I liked that there were explanations for sauce combinations that taste good together. Each sauce also had a lid, which felt hygienic.

You can also get ice cream for dessert. There's a variety of drinks prepared as well.

I had made a reservation and was shown to my seat upon arrival. The interior atmosphere is nice, making it a good spot for families, dates, or group gatherings.


There's a variety of tables, from seats for two to seats for four. The spacing between tables is fairly wide, so I could eat comfortably. There's no break time either. They also take bookings for broadcast filming or birthdays, so you could make special memories there — just contact the store directly for details.
Worth it for mala food in Daejeon?

Trying mala kaoyu for the first time this time, I could clearly tell what it was like once I actually ate it, much more than just hearing the name. I especially liked adding the vegetable-mushroom topping and eating a variety of ingredients together. I paired the rich flavor of the mala dish with cucumber salad and adjusted the meal to my taste using the self bar too.

More than anything, what I realized on this visit was that checking small details like coupons, events, and parking beforehand is far more convenient than just researching the food alone. If you're in Daejeon and curious about a mala dish that's a bit different from mala tang or mala xiangguo, I'd recommend trying mala kaoyu for yourself like I did. Next time, I'd like to pick a different topping and try yet another combination.
