Osan mushroom shabu restaurant with rich broth: Dongchundang
In short
Dongchundang Shabu Shabu Kalguksu Osan Dugok Branch is a shabu-shabu restaurant in Osan, Gyeonggi. I enjoyed mushroom shabu-shabu with beef, minari, dumplings, kalguksu, and fried rice. Verdict: the deeply mushroom-infused broth was the highlight.

Mushroom shabu kalguksu in Osan Segyo
Dongchundang Shabu Shabu Kalguksu, a great shabu-shabu spot in Osan Segyo where I could enjoy wholesome flavors! The parking was spacious and pleasant, and the large dining room made it easy to visit comfortably.
What are the parking and dining space like?
Dongchundang Shabu Shabu Kalguksu has a very large, pleasant parking lot, making it a great place to visit without worrying about parking on weekdays or weekends alike~ Parking is always a concern wherever I go, so I loved how roomy it was.

The building itself is huge and spacious, so it is such a nice place for family gatherings or group meals. With a range of shabu-shabu options, Dongchundang Shabu Shabu Kalguksu can satisfy all sorts of preferences.

The restaurant was so spacious and the tables were large, making the meal very comfortable! There was plenty of room between tables, too, so going back and forth to the self bar was super convenient.

A self bar worth visiting before and after your meal
The self bar had popcorn, coffee, black sesame soy milk, cordyceps tea, and more, so it was nice for a little something before or after the meal! It is the best kind of self bar for a family visit, with something to hit the spot for everyone of every age~!

In particular, you could enjoy unlimited makgeolli (Korean rice wine) refills poured from a kettle, and it looked so cold and delicious! I could not have makgeolli that day for reasons, but if you get the chance, I think the meal would be even tastier with it!

At Dongchundang Shabu Shabu Kalguksu, you can sit down and order easily on a tablet. I heard shabu kalguksu is cheaper and more reasonably priced when ordered for takeout!

The table has information on the sauces and how to enjoy the meal, so you can check it comfortably as you cook. The wasabi soy sauce was tasty~

You can choose either clear or spicy broth, and extra broth is available at the self bar, making refills convenient. There were also side dishes that went well with shabu-shabu, including fresh kimchi (geotjeori), sauces, and wasabi, which were nice to bring back from the self bar. They were covered with lids, so everything looked hygienic.

When you order, bibimbap is served as a pre-meal dish. It had young radish greens, gochujang (red chili paste), and seaweed flakes, and it was quietly such a special treat~ Nutty and savory, it was perfect to eat before the shabu-shabu!

From mushroom shabu-shabu to kalguksu
Mushroom shabu-shabu order complete!! It came with beef, minari (water celery), and all kinds of mushrooms. I added ongshimi mandu (chewy potato-starch dumplings) separately.

A healthy assorted mushroom platter was served, and all the different mushrooms were a feast for the eyes. Were there really this many kinds of mushrooms? The colors were so pretty and varied that I was delighted even before eating~

The fresh kimchi came in a mini earthenware jar, and you can take out as much as you want. It had a delicious flavor that paired perfectly with kalguksu.

Mushroom shabu kalguksu topped with loads of minari came as standard! There was so, so much minari. Once it wilts down, you can cook it all at once.

Briefly dipping the beef into the broth and lifting it out gave such a lovely pairing of clean-tasting beef and fragrant minari. The beef was sooo delicious with a light dip in soy sauce~
Once you add all the mushrooms and let it bubble away, the broth itself gains the clean, savory umami of mushrooms, creating a rich and fragrant deeply flavored soup. Maybe because it had already been steeped with beef, it felt even more nutty and full of umami.

I could cook and eat this many different mushrooms!! There were cordyceps, wood ear mushrooms, oyster mushrooms, king oyster mushrooms, and lion's mane mushrooms! There were so many mushrooms, so generously piled up that it felt never-ending no matter how much I ate.
I loved the mushrooms' soft, fluffy yet chewy texture. The mushrooms and other ingredients had soaked up so much flavor from the broth, so every bite was rich. Above all, the mushroom-infused broth was outstanding! The longer it cooked, the more its fragrant mushroom flavor came alive, and even spoonfuls of broth alone tasted deeply satisfying!
Stirring the kalguksu (knife-cut noodles) well as it cooks keeps it from sticking, and you can taste the mushrooms' umami as it is. The already richly steeped broth had soaked right into the noodles, so even though I was quite full, I still slurped them up easily.

A perfect course ending with fried rice
Of course, I could not skip fried rice at the end, so I had it too—and I was so glad I ordered it~ Scrape up even the slightly crisp bits stuck to the pan for a nutty flavor. The shabu-shabu, kalguksu, and fried rice course was perfect after all!
