On a day with a cool breeze, I had dinner plans in Mapo and came across Gyudo while looking for a good restaurant.

It is directly connected to the subway station, which I loved right away for accessibility, and there is underground parking in the building too, so arriving by car did not feel like a hassle.

The introduction calling it Korea's only premium gyukatsu specialty restaurant naturally raised my expectations. I ordered the yakiniku set for two, then added the smoked yakiniku because it was so good.
After hearing that it operates only directly managed branches, with no franchise locations, I trusted it even more. From the atmosphere to the service, it was a meal I was happy with all around.

As soon as I entered, each table was set with its own bangjja yugi (traditional Korean brassware) brazier, which made the first impression feel special. The softly lit interior also created an atmosphere that was perfect for a date.
Seeing everyone from families to international visitors filling the restaurant, I could tell it was loved by a wide range of people.
How were the gyukatsu and smoked yakiniku?

The gyukatsu had a crisp fried coating, while the center remained vividly red and close to rare.



The outside had a light, crumbly crust while the inside was soft and juicy, so every bite made that textural contrast really clear.
I liked being able to lightly grill it myself on the personal brazier and adjust the doneness to my taste. Even just searing the surface slightly brought out a much richer, nutty flavor.
The smoked yakiniku was wood-smoked in an offset smoker, so it had a depth of smokiness unlike ordinary meat. As soon as it hit the grill, a gentle smoky aroma spread out and made the beef's own savory flavor stand out even more. The cut had dense marbling, and more juices came through as it grilled, making it impossible to put my chopsticks down.


The salt, myeongi wasabi (pickled wild garlic with wasabi), sauces, and other accompaniments were all made in-house, so it was fun trying a different dip with each cut.



To finish, I stir-fried the rice and poured broth over it in a combination of sungnyung (scorched-rice tea) and ochazuke (rice in tea or broth). The nutty aroma of nurungji (scorched rice) and the savory broth came together for such a clean finish.




Thoughtful service and direct management


Details for each guest were everywhere, from individual drawers and cutlery pouches to tea bags of furikake topping. The use of bangjja yugi for the personal braziers was also an impressive feature you do not often see elsewhere.

The fact that it has not expanded as a franchise and operates only directly managed branches was another reassuring point. Since everyone grills for themselves, the biggest advantage was being able to enjoy the meal at their own pace, and the coat lockers meant I could dine comfortably without worrying about my outerwear.
