Cheese cutlet with spicy sauce in Cheonan: Jinsim Wang Donkatsu

In short

Jinsim Wang Donkatsu Cheonan Buldang is an old-style giant pork cutlet restaurant across from Mulchongsae Park in Buldang-dong, Cheonan. On this revisit, the writer tried the Jinsim Jjol Cheese Katsu with added spicy sauce, where the tangy jjolmyeon noodles and spicy sauce cut through the richness of the thick cheese cutlet. A place worth remembering when you want a filling Korean-style giant pork cutlet loaded with sauce instead of Japanese-style tonkatsu.

Japanese-style tonkatsu is delicious too, but sometimes you just crave a giant pork cutlet piled high with sauce, right? This day was exactly one of those days!

I suddenly wanted a big fat pork cutlet in Buldang-dong, so I went back to Jinsim Wang Donkatsu Cheonan Buldang.

Why I went looking for giant pork cutlet in Buldang-dong

Spacious dining hall seating at Jinsim Wang Donkatsu Buldang

Every once in a while I crave that old-school Western-style diner cutlet — big, thick, and drenched in sauce. So this time too, while looking for a good pork cutlet spot in Buldang-dong, I picked the giant wang donkatsu style over regular tonkatsu.

Interior suitable for both solo diners and groups

The dining room is spacious too — great for eating alone or with a group at Jinsim Wang Donkatsu Cheonan Buldang.

Jinsim Wang Donkatsu ages its cutlets for 72 hours and fries them fresh in-store every day. It's made the traditional handmade way with a special house sauce, which makes me trust the place more. And get this — the signature Jinsim Wang Donkatsu is a whopping 25cm across, haha.

I tried the wang donkatsu on my first visit — if you love old-school giant cutlets loaded with sauce, it's worth trying at least once. And the good news is, leftovers can be packed to go!

What I ordered this time: Jinsim Jjol Cheese Katsu

I ordered the Jinsim Jjol Cheese Katsu. I wanted both jjolmyeon (chewy cold noodles) and cutlet, so this was the pick — and the portion was, as expected, huge.

Soup prepared at the self-bar
A bowl of the rich, creamy pre-meal soup

Starting with soup from the self-bar

The self-bar has a nice pre-meal soup — thick and creamy, the kind that perks up your appetite right away.

While I was working on the soup, the cutlet arrived. My Jinsim Jjol Cheese Katsu had way more cheese than I expected — you could see it stretching — and the jjolmyeon on the side kept it from feeling too heavy.

Thick cheese cutlet before being cut open

Because it's stuffed with cheese, the cutlet is also noticeably thick, which had my expectations rising even before the first bite, haha.

Sure enough, it was packed with cheese inside — as soon as I cut it in half, cheese came pouring out, and lifting it up made it stretch into these long, nutty-looking strands.

Wrapping the cutlet around the cheese and eating it that way — haha, so good.

Adding the spicy sauce cuts the richness

I also added the spicy sauce, and it was a really good match. The rich, nutty cheese paired with the spicy sauce cut through the heaviness, making it much easier to finish the whole thing (if you're sensitive to spice, it might feel a bit hot for you).

Last time, the jjolmyeon paired really well with the cutlet, so I ordered a noodle-included menu again this time — and sure enough, the tangy, spicy jjolmyeon kept resetting my appetite.

A different way to eat it: from lettuce wraps to spicy sauce

One somewhat unique thing about Jinsim Wang Donkatsu is that you can wrap the cutlet in lettuce. You put the cutlet on a lettuce leaf, add sauce, and wrap it up — I wasn't sure about this at first, but it turned out to work better than expected.

Adding jjolmyeon into the wrap too gives you crispy cutlet + crunchy lettuce + tangy-spicy noodles all at once — it feels like eating a Korean-style salad.

Topping it with the spicy sauce too makes it even more fiery — worth trying!

Why the second visit was just as satisfying

Even past the weekday lunch rush, customers kept coming in and delivery orders kept rolling out — and considering I came back myself, this is definitely a place that comes to mind whenever I want giant pork cutlet in Buldang-dong.

If you prefer big Korean-style wang donkatsu over Japanese-style tonkatsu and want a hearty, filling meal, this one's for you.
