Let me introduce a really solid galbitang (short rib soup) spot near Hoegi Station in Dongdaemun-gu, Seoul. (A steaming bowl of broth in the evening as it quietly gets colder~)

I found the ribs here to be seriously legit, and the hot, rich broth was so good I immediately wanted to come back again~ (I ate here for Sunday dinner with my girlfriend)

Inside Hoegi Wang Galbitang: group tables and solo-dining seats
The inside of Hoegi Wang Galbitang, a galbitang restaurant near Hoegi Station, was packed with customers, not a seat free haha (it was 6pm on a Sunday, full of dinner guests~)

Hoegi Wang Galbitang has a spacious dining room, so groups can sit without any problem. Plus, there are solo-dining seats set up by the window for people eating alone.

This Hwigyeong-dong lunch spot, Hoegi Wang Galbitang, gets busy at lunch and dinner, so they also have waiting seats ready for people who queue up. (We waited about 10 minutes during dinner time!!!)

Hoegi Wang Galbitang, a great lunch spot in Hwigyeong-dong, clearly and thoroughly discloses the origin of its ingredients haha. The ribs and shank come from the US, Australia, and New Zealand, only the chili powder is from China, and ingredients like seokbakji (radish kimchi), kimchi, rice, and deodeok (bellflower root) are all domestic.

Hoegi Wang Galbitang has a self-serve bar, and while your first side dishes are served, refills are self-service. (+ You can also grab boricha gangjeong from the self-serve bar) (+ Unlimited rice refills from the rice cooker!!) → Come for lunch and refill your rice as much as you want.
Hoegi Wang Galbitang menu and how to order at the kiosk
At Hoegi Wang Galbitang, you comfortably order via the kiosk at each table, then pay at the counter on your way out haha.

They say the galbitang is made in-house for energy recovery: every day they soak 120kg of ribs to drain the blood for 12 hours, wash them thoroughly, then parboil and simmer them for a long time with various ingredients. (They even make their own seokbakji here)

- Spicy-sweet braised beef short ribs (half rack) ₩58,000

My girlfriend and I each ordered a bowl of the Wongi Hoebok Galbitang (2 ribs), two servings total haha. + Thinking about that hot, energy-restoring galbitang broth, we suddenly got really hungry.
What is the Wongi Hoebok Galbitang (2 ribs) like?
We ordered the Wongi Hoebok Galbitang with two rib bones each, and the visuals were insane!!! (Everything really looked like it would taste amazing^~^)

You can taste tender rib meat from this carefully made, long-simmered galbitang, and on top of that, the rib bones were seriously super huge with a ton of meat attached.

Eating the ribs and broth together with rice was completely filling, gave me a real energy boost, and left me completely full with a happy sense of fullness UP
