When the wind turns chilly, all I can think about is shabu-shabu — dipping fresh vegetables and tender meat into a hot, clear broth. So I made my way to Homilwon Shabu Kalguksu Gimpo Main Branch, one of Gimpo's most talked-about shabu-shabu spots among locals for its great value and generous portions!

High ceilings, floor-to-ceiling windows, and the restaurant's atmosphere
Walking in, I was struck by the wide-open, tall ceiling and the natural light pouring in through the floor-to-ceiling windows.

The tables were spaced generously apart, making the place perfect for a family meal or a group gathering.

Ordering the Full Table Special for 2
With friendly guidance from the staff, we settled in and ordered the restaurant's signature Full Table Special for 2 — a full course that includes not just shabu-shabu but also boiled Korean pork and spicy fire-flavored baby octopus. My expectations were high.

After ordering, we headed straight to the self-serve bar set up in the middle of the restaurant.

All-you-can-refill beef mushroom rice at the self-serve bar
One of Homilwon's big draws is the all-you-can-refill beef mushroom rice corner! The fluffy rice was loaded with minced beef and shiitake mushrooms — mouthwatering just to look at.
I scooped a big bowl, drizzled on seasoned soy sauce and sesame oil, mixed it all up, and tasted it — the rich aroma of the mushrooms and the savory beef came together so well that I finished a whole bowl before the main dishes even arrived.

Agaricus mushroom broth shabu-shabu and boiled Korean pork
Soon after, the star of the show — the Full Table Special for 2 spread — was laid out beautifully.

The rich agaricus mushroom broth, giving off a subtle fragrance, arrived neatly plated with fresh vegetables, shabu-style beef, and freshly boiled Korean pork.

Blanching fresh vegetables and beef in the clear agaricus broth gave a deep, clean, savory flavor with no heaviness. The boiled pork that came alongside had no gamey smell either — moist and tender, with clean juices you could taste in every bite.

Spicy fire-flavored baby octopus paired with boiled pork
The spicy stir-fried baby octopus included in the set had a pleasant char flavor along with a good kick of spice.

Wrapping a piece of chewy octopus on top of tender boiled pork made for a fantastic balance of sweet, salty, and spicy.

The right order: house-made rye kalguksu and nutritious porridge
Moist boiled pork ➔ fire-flavored spicy octopus ➔ clear shabu beef ➔ house-made rye kalguksu (wheat noodle soup). After finishing the shabu-shabu, we added the nutty house-made rye noodles and boiled them in the broth — chewier than regular wheat noodles, and easier on the stomach. Finishing off with the savory nutritious porridge made it complete.
