In short

Onjeongban Shabu Kalguksu Namyangju Byeollae Main Branch is a shabu-shabu and kalguksu (knife-cut noodle) restaurant on Siksong 1-ro in Byeollae, Namyangju. Three servings of the handmade rolled dumpling hot pot (3 dumplings per person) came with beef and shabu vegetables, finished with kalguksu noodles, plus a self-serve bar for ingredients, sauces, and post-meal ppeongtwigi (puffed rice snack), slushie, and coffee. Shabu-shabu with warm broth loaded with fresh vegetables and meat 🥬🥩 — it's great to eat with a group, and there's fun in picking and choosing what you like, so it's one of my favorite dishes! This time I found a Byeollae spot with great taste and a solid setup, so I'm bringing you my honest review of the meal✨

Exterior and parking

Arriving at the restaurant, the exterior was clean and easy to spot, so I had no trouble finding it! From the entrance onward, everything felt well-maintained, and there was a comfortable atmosphere that made it easy to settle in for a meal. It felt like an unpretentious, welcoming spot to come for shabu-shabu 😊

Best of all, the parking lot was spacious, making it convenient to visit by car 🚗 With plenty of parking, it seems like a great option for family outings or visits with a larger group without worrying about where to park.

Next, I looked over the menu board 🥢 With shabu-shabu as the base, there was a good variety of dishes, making it easy to choose according to taste. The menu setup was well thought out too, so it seemed great for a group to each pick what they wanted! We also looked over the menu carefully and ordered what we felt like eating 😊 Let me introduce what we ordered, one by one 💕

Guide on how to enjoy shabu-kalguksu the best way

Looking over the menu board, there was shabu-shabu along with a variety of other dishes 🥢 And on one side, there was a detailed guide on how to enjoy shabu-kalguksu the best way! It walked through enjoying the shabu-shabu first, then adding the kalguksu noodles to the leftover broth, and finishing with fried rice at the end — following the order seemed like it would make the whole meal even more enjoyable 😊 We decided to follow the guide step by step too 💕

The standard sides were dressed kimchi (geotjeori), salad, and gondre (thistle) rice; the main components were beef, shabu vegetables, kalguksu noodles, and porridge ingredients!

How was the broth and the meat

Overall the broth was clean yet deep, so I enjoyed it a lot. At first it felt light and clean, but as the meat and vegetables simmered longer, the flavors naturally drew out and the broth got richer! The shabu-shabu meat was tender with no gamey smell and had a clean taste, and eating it with the fresh vegetables added a crisp texture that made a great combination~ Especially eating vegetables and meat together in the warm broth felt hearty without being heavy 👍🏻

Finishing with kalguksu

After adding the kalguksu noodles and boiling them, the broth soaked into the noodles nicely, giving a whole different flavor to enjoy~ The noodles were also chewy and paired well with the broth, and it was satisfying to be able to eat warm right to the end. Overall it wasn't spicy or heavy, just clean-tasting shabu-kalguksu that anyone, young or old, could enjoy comfortably. It felt like the kind of taste I'd think of whenever I want a hearty meal that goes from shabu-shabu all the way to kalguksu 😊
