Even at the medium size, the portion was truly massive. Instead of small, bony bits of monkfish, it was packed generously with pale, thick chunks of real meat.

Cut into pieces with scissors and popped into your mouth, the texture is both tender and pleasantly chewy — outstanding.


Instead of artificial capsaicin heat or aggressive sweetness, the deep, savory umami of the Jeolla-do secret sauce clings to the crunchy bean sprouts and monkfish flesh. Since it was the mildest option, there was no harsh kick, just deep flavor — the three of us couldn't put our chopsticks down and ate until we were completely stuffed.
