Today I want to introduce a place I knew I absolutely had to go back to. Honestly, I'm not that into kalguksu (knife-cut noodle soup). I don't dislike noodle dishes entirely, but it's not the kind of thing I go out of my way to eat. Still, I have this vivid memory of eating Yubok haemul kalguksu once before and thinking it was genuinely delicious.

Ever since then, whenever it crossed my mind, I'd say things like, "ah, that kalguksu place was so good..." This time, my husband and I were having a long-overdue Dongtan date and happened to be passing near Dongtan Central Park, so naturally we said, "should we go there?" and ended up back at Yubok Haemul Kalguksu Dongtan Direct Branch. The weather's gotten chilly, so it was the perfect timing! :)

Why Yubok Haemul Kalguksu sticks with someone who never orders kalguksu
If you're like me and don't go out of your way to eat kalguksu, you'll probably get this. When people say a place is a kalguksu spot, you sometimes think, well, kalguksu is kalguksu. I used to think that too. But Yubok haemul kalguksu felt different from the first bite. What stuck with me most was the broth. Yubok Haemul Kalguksu Dongtan Direct Branch doesn't only serve kalguksu. Besides the signature seafood kalguksu, there's stir-fried webfoot octopus, jjukkumi haemul buchujeon (webfoot octopus and seafood scallion pancake), shabu-shabu kalguksu, dumplings, and hot-plate dishes. Looking at the menu, it seems like a great place to share several dishes if you're in a bigger group.
There were two of us that day. We went with Yubok haemul kalguksu and the haemul buchujeon. Honestly, every time I come here I don't even consider other options — it's always this same combo haha.

The barley rice starter: mix in the julienned radish
After ordering, we waited a bit and the pre-meal barley rice came out first. I always feel a little happy when a starter like this shows up. It's a simple way to whet your appetite before the kalguksu arrives, and better yet, it wasn't just plain barley rice — it came with julienned radish to mix in. I stirred the radish into the rice, and this simple thing turned out to be way more delicious than expected.

It kept our mouths from getting bored while waiting for the kalguksu. You can dig in right away?! Hehe—


And then... the kalguksu arrives, loaded with seafood!!

The 3-minute hourglass beside the table
One thing I found fun about this place is the 3-minute hourglass. There's a sand timer on the table — you just flip it and wait. At any place where you cook the kalguksu yourself, there's always that awkward guessing game: "can I eat this now?" "does it need more time?" "how many minutes until it's boiling properly?" Especially when you're hungry, those few minutes feel endless.
But at Yubok Haemul Kalguksu, a top Dongtan kalguksu spot, you just flip the hourglass. 3 minutes. Watching the sand fall, the time actually passes faster than you'd think.

And then the jjukkumi haemul buchujeon that came alongside! I really want to strongly recommend this dish. No need to say more, honestly. Make sure to eat it together with the kalguksu!!

When we ordered, my husband and I wondered if the kalguksu portion would be huge and whether we'd manage to finish it all. Still, we couldn't skip the jjukkumi haemul buchujeon! So we said, if there's leftovers, we'll take them home — but guess what, we ate every last bite........... Nothing left. Nothing to take home lol. We kept saying we were about to burst, but we ate it all to the very end. That's how good it was.

How were the broth, noodles and seafood in the Yubok haemul kalguksu?
I think the biggest reason I love Yubok haemul kalguksu is really the broth. Noodles matter in kalguksu, but personally I care more about the broth. No matter how good the noodles are, if the broth is bland the whole thing falls flat. But Yubok's broth is quite rich. There's the fresh brightness that comes from the seafood, plus a deep flavor from the stock itself, so it's tasty enough to just spoon up on its own.
I especially like broth that's clean but full of umami rather than aggressively spicy or salty, and this broth hit exactly that note. First one spoonful, then another, and before I even got to the noodles I'd already had quite a bit of broth.

Haemul buchujeon with a properly crisp edge
For jeon (savory pancake), texture is everything to me. It has to be crispy outside and moist inside. Yubok's haemul buchujeon was exactly my kind of style. The crispy-outside part is done right. The outer layer is fried crisp while the inside is packed with scallions and seafood, giving it great texture with every bite. And you can tell the pancake itself was pan-fried well.
There's plenty of seafood in it too. When I cut off a piece, it wasn't just scallions — you actually bite into seafood along with it. So I ended up alternating: a bite of kalguksu, then a bite of pancake, then back to a spoonful of broth. This combo is genuinely great. The kalguksu broth is warm and refreshing, the pancake is crispy and savory, and since the textures and flavors are so different, eating them together never gets tiring.



Springy noodles and one broth-soaked bite
It felt less like going to eat kalguksu and more like going to eat springy noodles in a delicious seafood broth. The noodles aren't overly soft — they have just the right amount of chew. And since the broth soaks into the noodles so well, you taste the broth with every bite of noodle. So it's not just slurping down plain noodles — the noodles themselves carry the broth's flavor, making every single bite delicious.

Clams and mideodeok: the broth deepens as it simmers
The charm of seafood kalguksu is, of course, the seafood. As the clams and mideodeok (sea pineapple) simmer on the table, the broth's flavor gets deeper and deeper. Especially when you scoop out a clam and take a spoonful of broth alongside it — that's when you get it, this is why people eat seafood kalguksu. The seafood isn't just a token few pieces either; there's enough to actually taste it properly.
