Even before the meat arrived, a huge pile of whole cabbage kimchi and seasoned bean sprouts went straight onto the big cast-iron lid grill at the center of the table. Honestly, doesn't that visual alone seal the deal? Even better, when I asked for more kimchi and bean sprouts, they brought out another generous portion just like that.

And then the meat made its entrance! True to its grade 1 fresh quality, the deep red marbling was seriously impressive. So was the thickness.

The biggest perk of this place! Skilled staff help you grill the meat. They lay it on the grill first, and once the surface is cooked through, calling them over gets you perfectly cut, mouthwatering pieces.

With dazzling scissor work, the staff member cut the meat into easy bites, while the kimchi and bean sprouts soaked up the pork fat and turned golden. With the bubbling melted shrimp sauce right in the center, the setup was complete.

Finally, tasting time! I dipped a perfectly cooked piece of meat into the melted shrimp sauce in the center. The moment it hit my mouth, that crisp-outside, tender-inside texture came through instantly. Thanks to the low-temperature aging, there wasn't a trace of gamey smell, just savory juices bursting through.

Now it's time to properly wrap it up. I piled thick meat on fresh lettuce, added kimchi and bean sprouts stir-fried in pork fat, garlic, and ssamjang, then took a big bite. That fully-packed satisfaction — you all know the feeling, right?
