It's not actual tofu but tofu made from egg, and it's as soft as pudding 🍮 The combination with chewy shrimp and sweet pumpkin was absolutely fantastic.

Tangy vinegar jelly paired beautifully with seaweed and octopus. Cool and sour, it was the perfect palate cleanser 🐙

The mackerel came with radish pickled in yuzu sauce 🍊 The mild mackerel paired with the tangy yuzu radish hit a really clean balance.

This red seabream nigiri kicked off the sushi part of the course! Tucked inside the neta was fried white scallion — such a treat! It wasn't just a plain red seabream nigiri; the chef's personal touch made it that much more memorable.

Being a blue-backed fish, it could easily be fishy, but it wasn't at all — surprisingly smooth 😆

I basically inhaled this the second it arrived, so I had to ask my friend to send me a photo of it afterward — the tuna akami 🤣 Lightly cured in soy sauce, the seasoning was perfect, and it melted the moment I bit into it! 😋

I worried mackerel might be fishy, but thanks to the pickled ginger garnish on top, there wasn't a trace of it!

The chef said he seared the outside crisp so you wouldn't feel the small bones — and sure enough, the moment I bit in there was no bone texture at all, just crispy outside and melt-in-your-mouth soft inside 😊 Even my friend, who normally avoids eel because of its bones, kept marveling and eating it up happily!

The cross-section looked so packed it felt almost a shame to eat it in one bite. But futomaki really is best devoured in one big bite! 🤗

Instead of the usual thick udon noodles, these were thin and smooth, which made them even more appealing. Even thin, the noodles kept a chewy bite the whole way through — delicious haha.
