Byeollae shabu kalguksu with kimchi made three times daily: Onjeongban
In short
Onjeongban Shabu Kalguksu Namyangju Byeollae Main Branch is a shabu kalguksu (hot pot with knife-cut noodles) restaurant on Siksong 1-ro in Byeollae, Namyangju, Gyeonggi. The rolled dumpling hot pot for three costs 13,000 won per person and runs as a course of shabu vegetables, beef, kalguksu noodles and rice porridge, with unlimited gondeure (Korean thistle) rice from the self-serve bar. As the weather cools down a bit, I started craving shabu kalguksu (hot pot with knife-cut noodles) — a hearty bowl loaded with vegetables and meat in hot broth. The place I visited recently was Onjeongban Shabu Kalguksu Namyangju Byeollae Main Branch. 100% revisit for me.

Parking and interior: is Onjeongban good for a family meal?

Onjeongban sits on the first floor of the building, so it wasn't hard to find. There were a lot of people waiting, but the interior is spacious so we didn't wait long before being seated.
Once inside, the space was brighter and roomier than I expected. There was even a private room.
The self-serve bar: unlimited gondeure rice

One thing I really liked about Onjeongban is that you can eat as much gondeure rice as you want from the self-serve bar. The fragrant gondeure (dried wild greens) mixed into the rice went really well with the shabu broth, and it made the meal feel more filling than kalguksu alone.
Kimchi made three times a day and crunchy cabbage salad
I heard they make the fresh-cut salad (geotjeori) three times a day. Since customers keep coming steadily and there's often a wait, table turnover is fast, so the side dishes never felt like they'd been sitting out.
The shredded cabbage salad was crisp too, not wilted at all, and the color was vivid — I got the impression the ingredients get refilled often.

There was also warm, savory ssokdang tea. This is a restaurant where you can feel the owner's thoughtful attention to guests everywhere. The owner has a friendly face and is incredibly kind to customers. I told the owner they could open branches nationwide — that's how good this place is, well beyond just a good Namyangju restaurant or Byeollae restaurant.
What we ordered: rolled dumpling hot pot for three, 13,000 won per person
We ordered the rolled dumpling hot pot for three, ₩13,000 per person with no extras.

The rolled dumpling hot pot includes shabu vegetables, beef, kalguksu noodles, and porridge ingredients all for ₩13,000 per person, plus you get to use the gondeure rice — pretty solid value for a full meal.
How do Onjeongban's handmade rolled dumplings taste?

It includes meat dumplings and kimchi dumplings, and the wrapper isn't thick, so you can really taste the filling. There's a lot of tofu in there too, so it sat light on the stomach even after eating a lot.

We ate the shabu vegetables first, then the rolled dumplings and kalguksu noodles, and finally made porridge at the end with roasted seaweed flakes, carrots and chives — a full, well-paced meal.
Finishing the hot pot with kalguksu noodles

Onjeongban's kalguksu noodles are thick and springy, so they didn't get mushy even after being boiled for a while. There was still a satisfying bite to them, and even after soaking up plenty of broth, the noodles never went limp — really delicious.
A Byeollae restaurant that works for kids and grandparents alike

With familiar options like tender beef, kalguksu noodles and meat rolled dumplings to start, plus vegetables, warm broth and gondeure rice on the side, it seems like an easy place for any generation to find something they like — a solid spot for a family meal or a group gathering.
