Weekend French rack with Maldon salt at a Dasan lamb restaurant: Jin

In short

Jin 1926 Dasan Branch is an Australian clean lamb specialty restaurant on the 2nd floor of Sinhae Central Tower 4, Namyangju, Gyeonggi. Visiting on a weekend evening with a partner, this writer ordered French rack, lamb ribs and the myeongnanjeot (salted pollock roe) special rice, all grilled tableside by staff from start to finish. The French rack dipped in Maldon salt burst with juice and had no gamey smell, and the complimentary stir-fried mung bean sprouts rounded out the meal perfectly.

There's one place that comes to mind first whenever I want to enjoy lamb properly, and comfortably. Jin 1926 is a Dasan lamb restaurant serving top-grade premium Australian clean lamb flown in by air freight. Set on a pleasant floor of a newly built building, it's easy to reach by public transit or on foot, and it's already well known in the neighborhood as a Dasan restaurant where you can enjoy a high-quality meal in a modern, upscale atmosphere.

I visited last weekend with my partner and tried the restaurant's signature French rack along with tender grilled lamb ribs and the uniquely savory myeongnanjeot (salted pollock roe) special rice — total satisfaction! Thanks to the attentive, friendly grilling service where trained staff grill every piece of meat for you, we didn't have to lift a finger to cook and could fully focus on conversation, making for a completely satisfying dinner.

Dachi seats vs table seats: what's the vibe at Jin 1926 Dasan Branch?

Jin 1926 Dasan Branch has both dachi (bar) seating and spacious regular table seats. Step into the 2nd-floor space and you're greeted by a calm, upscale black-toned interior paired with warm, easy-on-the-eyes lighting that creates a cozy atmosphere.

There are spacious regular tables where you can sit facing each other and chat comfortably, alongside dachi (bar) seats arranged side by side, perfect for watching your meat get grilled as you eat. With an individual brazier right in front of each dachi seat where staff grill the meat delicately for you, this Dasan lamb restaurant is ideal for a date or a small gathering with friends.

We settled into a comfortable regular table, and as we waited for Jin 1926's signature thick, fresh cuts of meat to start sizzling on the brazier, our anticipation for the meal built up.

Ordering French rack, lamb ribs and Jin special rice, paired with Maldon salt

The menu we ordered at Jin 1926 Dasan Branch that day was French rack, lamb ribs, and Jin special rice. The brazier was set up to the side of the table, so we didn't get smoke blown directly in our faces.

What we ordered that day was French rack, lamb ribs, and Jin special rice ^_^

With the brazier set to the side of the table, we didn't have to breathe in the smoke directly — even more comfortable! These small touches are exactly what turn people into regulars, I think.

Soon a neatly set plate and water glass arrived, along with premium British Maldon salt, wasabi, and thinly sliced cheongyang chili — a variety of accompanying sauces to lift the meat's flavor even further.

Then the French rack arrived with its gorgeous, artistic marbling in bright red, alongside the fresh, thickly cut raw lamb ribs.

On a specially made cast-iron Genghis Khan brazier, staff piled fresh, colorful vegetables — onion, chunky king oyster mushroom, green onion, shishito pepper, cherry tomato — around the edges, then placed the thick cuts of meat at the hottest center and began grilling with expert skill.

You could tell just by looking that the meat was impressively fresh.

As the French rack and lamb ribs cooked, the savory smell had us drooling before we even took a bite ><haha

We tried the French rack first, and its clean, savory flavor was outstanding+_+

A well-grilled piece of French rack

Dipping a perfectly grilled piece of French rack lightly into the Maldon salt, the savory juices trapped inside burst in my mouth with every bite, melting away as softly as cotton candy.

There was absolutely none of the off-putting gamey smell lamb can sometimes have, which reaffirmed just how outstanding Jin 1926's ingredient quality really is.

The well-grilled lamb ribs that followed were also outstanding — chewy yet tender — and paired with sweetly grilled onion or the special soy sauce with a kick of cheongyang chili, the flavor never got tiring.

How does the Jin special rice (myeongnanjeot special rice) taste?

Jin 1926 Dasan Branch's Jin special rice is rice mixed with gondre (dried mountain vegetable) topped with a whole portion of myeongnanjeot (salted pollock roe). Along with the meat, this special rice is an absolute must-try here. Fragrant, seasoned gondre-mixed rice generously topped with plump, salty myeongnanjeot — the myeongnanjeot special rice!

Mix it up with a spoon and wrap it in crispy seaweed, and the umami literally explodes.

Placing a well-cooked, thick piece of meat on top of the myeongnanjeot special rice, wrapping it in crispy roasted seaweed and popping it in my mouth — the salty, savory harmony was incredible, and I simply couldn't stop reaching for the spoon.

A bite combining meat and myeongnanjeot rice in seaweed

The crunchy texture of the smoky stir-fried mung bean sprouts kept adding to the mix in between bites, and the combination of meat and side dishes brought us so much happiness throughout the meal.

Paper handles, grilling service: overall thoughts on Jin 1926 Dasan Branch

Jin 1926 Dasan Branch fits a special paper handle onto the bone end of the French rack, and staff take care of everything from grilling to plating. Full of thoughtful touches right to the very end — this Dasan lamb ribs restaurant, Jin 1926 Dasan Branch!

Thanks to the considerate touch of fitting a special paper handle onto the bone end of the French rack for easy eating, we could neatly and confidently pick apart the French rack ribs without getting meat grease on our hands.

Staff grill the meat from start to finish to the perfect doneness, then plate the cooked meat and vegetables separately at your eating pace so nothing burns — this friendly grilling service was a standout advantage even among Dasan lamb restaurants.

We got to fully taste the outstanding natural flavor of the high-quality, fresh lamb ribs, and with the sweetness of vegetables grilled generously in meat fat and the satisfying pop of texture from the myeongnanjeot special rice, every dish we ordered came together flawlessly for a perfect dinner.
