I stopped by Pizzeria O Hapjeong on a weekday. Following the alleys of Hapjeong-dong, the sky-blue exterior and the huge PIZZERIA'O sign weren't hard to spot at all. I went right at opening time, and even before lunch hour a fair number of customers had already come in — I could tell weekends would probably mean no seats.

A photo of someone who won first place at the 2019 Rome Pizza World Cup in Italy was hanging on the wall, which made me even more curious what kind of pizza would come out. 😄 We had two big pizzas and a salad, though quite a few other tables were having pasta.

Pizzeria O ferments its dough for 72 hours and bakes the pizza in a 485°C wood-fired oven. Maybe that's why it was so light and chewy. I usually get a stomachache the next day after eating pizza dough, but this felt fine even as part of a diet-friendly meal — my weight didn't budge the next day, and best of all, my stomach felt comfortable. 👍👍

The dough folded into a star shape and baked was really unusual, and it was piled generously with prosciutto and rucola on top. The salty prosciutto paired well with the slightly bitter rucola aroma, and the Parmigiano cheese filled it out with a nutty savoriness. Inside the star-shaped crust, they'd tucked in finely chopped olives — even eating just the dough, the olive flavor came through strongly, which I loved.

A tomato-based pizza topped with four kinds of salumi. As you can see in the photo, the ham and sausage toppings are generous, and tomato sauce spreads moistly between the melted cheese. The rich flavor of the salumi toppings and a touch of spiciness gave it a completely different feel from the Stella.
