The thick cuts of fresh pork belly, premium neck meat, and fresh short ribs come pre-seared over strong charcoal first, and after checking the grill temperature, the staff grill them with real care and precision.

They cut the meat, which has developed a proper Maillard crust, into neat bite-sized pieces and line them up on the grill — with a pro's hand involved, it simply can't taste bad. The juices stay locked in without escaping, so every bite bursts with savory flavor.

How to mix water naengmyeon with pollack sashimi naengmyeon

To finish the meal at Hanam Doeji Jip Seokgye branch, we ordered water naengmyeon (cold noodles) and pollack sashimi naengmyeon to share. We ordered these after having enjoyed the meat to a good degree, and mixing the two together turned out to be the delicacy of this visit.

The water naengmyeon, topped with floating ice shards, had a broth that was refreshingly cool and clean all the way down, cutting through the richness of the meat, while the pollack sashimi naengmyeon had chewy noodles coated in a spicy-sweet raw fish seasoning that was absolutely full of savory depth.

And here's my own little tip (the genius combo)! After eating most of the water naengmyeon noodles, try adding the pollack sashimi naengmyeon into the leftover water naengmyeon broth and mixing it well. The cool dongchimi-style broth mingles with the spicy sauce to transform into an upscale mixed naengmyeon (mul-bibim naengmyeon) style — and this was truly the best delicacy of the meal.

Personally, topping this mixed naengmyeon with a piece of golden grilled kimchi and a juicy bite of meat, then eating it all in one bite, was pure heaven. If you visit, I highly recommend trying this noodle combo!
