Garak-dong chicken noodle soup with galbi mandu: Hanyang Dak Kalguksu
In short
Hanyang Dak Kalguksu Main Branch (한양닭칼국수 본점) is a chicken noodle soup restaurant in Garak-dong, Songpa, Seoul. Two servings of chicken kalguksu (chicken noodle soup) arrived with a plate of galbi mandu (short-rib dumplings), and the laver topping over the thick, milky broth worked beautifully with the sweet-salty dumplings. Hanyang Dak Kalguksu is worth returning to whenever a hearty bowl of broth is calling.

Back at Hanyang Dak Kalguksu in Garak-dong, Songpa
Today I want to introduce, once again, a place I'd recommend without hesitation whenever a rich broth dish is calling in Garak-dong. Honestly, I've been here two or three times before, and it's always delicious no matter how many times I come back.
Hanyang Dak Kalguksu, which has been building a word-of-mouth reputation as a Garak-dong favorite, is a solid restaurant where nothing is lacking — from the clean exterior to the tidy, well-made food. The pleasant interior and friendly service already put me in a good mood before the meal even starts.
At lunchtime it's packed with office workers, and in the evening it fills with families, giving off the vibe of a genuine neighborhood favorite. Even amid the busy Garak-dong commercial district, it keeps its own warm yet clean atmosphere, so anyone can settle in and focus comfortably on their meal.

Ordering chicken kalguksu for two and galbi mandu
Sitting down and looking over the menu, there were plenty of side dishes to choose from, but I ordered the restaurant's signature dish — chicken kalguksu (2 servings) — best showcasing its fundamentals, along with a plate of galbi mandu (rib-flavored dumplings), which would be a shame to skip as a side.
The smell of broth being carefully simmered somewhere in the restaurant drifts by and strongly stirs the appetite. The spicy and mild napa cabbage kimchi and kkakdugi — the true measure of any good kalguksu (knife-cut noodle soup) restaurant — were also neat and crisp, clearly ready for a perfect pairing with the chicken kalguksu.

How does laver topping change the chicken kalguksu?
A moment later, the chicken kalguksu arrived in a huge bowl, visually overwhelming. Over the milky, thick chicken broth sat finely shredded chicken meat, and — the finishing touch — a generous helping of laver (gim) topping.

Thick chicken broth and chewy hand-cut noodles
Deep broth: taking a first spoonful of the soup, the rich flavor of chicken bones simmered for a long time fills your mouth. It's clean with no gamey smell at all, yet has a heavy, sticky-lipped collagen richness that's just excellent.
Chewy noodles: the noodles go down smoothly with none of that raw-flour taste, boasting a springiness that rivals hand-pulled noodles. Soaked in the thick broth, they're perfectly seasoned even eaten alone, and grow nuttier the more you chew.
The kick of laver topping: the laver, which adds savory depth and a pleasant salty edge to what could otherwise be a plain or greasy meat broth, is a stroke of genius. As it softens into the soup, it adds an oceanic flavor that lifts the broth to another level. If you like, a light sprinkle of pepper adds a spicy aroma that keeps you from getting tired of the flavor all the way to the last spoonful.

Sweet-salty galbi mandu with fresh geotjeori kimchi
The galbi mandu that arrived alongside the chicken kalguksu is exactly the textbook definition of a sweet-salty side dish.
Rich juices and texture: inside the glossy, thin, chewy dumpling skin is packed tight with meat filling deeply seasoned with sweet and salty rib marinade. The moment you bite in, a faint charcoal-grilled aroma and moist rib juices spread through your mouth, completely waking up sleeping taste buds.
Perfect harmony: after sipping the plain, heavy chicken kalguksu broth again and again, pairing in a sweet galbi mandu now and then strikes an amazing balance of flavors. In particular, laying a bit of spicy, crisp fresh kimchi (geotjeori) on top of the mandu is a hidden delicacy that pleasantly cuts through the sweetness.

Is Hanyang Dak Kalguksu worth a return visit?
A meal at this Garak-dong favorite, with its generous portions, deep flavor, and reasonable prices, was more than enough to melt away a day's fatigue. Rather than flashy technique or aggressive seasoning, this is a place that wins with basics done right and deep flavor built over time — which is exactly why it left such a strong impression.
On days with such big temperature swings, when you want to soothe your stomach with hot broth or need a hearty meal to restore energy, this is the kind of appealing restaurant you'll turn back to without hesitation. If you're looking for a proper bowl of kalguksu near Garak-dong, Hanyang Dak Kalguksu will absolutely not disappoint.
