The gentle aroma of tonkotsu broth greeted me as soon as I entered and raised my expectations even more. The interior was cozy yet neat, with a setting that suited everyone from office workers dining alone to families.

Each table has danmuji (yellow pickled radish), ginger, and minced garlic, so you can adjust the seasoning of your broth to your taste!

S&B shichimi is a Japanese seven-spice blend made mainly with chili powder, along with sesame, sansho pepper, and other spices. It is sprinkled over udon, ramen, soba, yakitori, and more! GABAN is coarsely ground black pepper. Taste the broth first, then add either one as you like if the seasoning is not quite right for you!

What was the Fukuoka-style tonkotsu Kara Ramen like?
The spicy Kara Ramen paired deep tonkotsu broth with a sharp, warming heat, and one sip of the broth brought the taste of Fukuoka right back. At many ramen shops, adding spice means losing the broth’s natural depth, but that was not the case with this Kara Ramen.

A spicy seasoning sat atop the intensely rich tonkotsu broth, so the deep broth came first and the sharp heat followed afterward. The noodles were springy and chewy, balancing beautifully with the broth, and I could finish the bowl cleanly without it becoming greasy. If you want to properly enjoy tonkotsu ramen in Daegu, I recommend starting with this menu item.
If you are not great with spicy food, starting with the basic tonkotsu ramen and trying Kara Ramen on your next visit is a good option. If you want to enjoy every last drop of broth, I also recommend adding rice once you are about halfway through the noodles!

The katsudon (pork cutlet rice bowl) was filling even on its own, with a crisp-outside, tender-inside fried pork cutlet topped with sweet-savory sauce and egg. Eaten with rice, it had a charm completely different from the ramen.

Juicy Jeju black pork gyoza
The Jeju black pork gyoza released juices as soon as I bit into them. The distinctive flavor of black pork really came through, and they paired wonderfully with the ramen broth. For a family visit, I recommend ordering gyoza alongside a bowl of ramen to share.
A bowl of ramen is plenty filling for a solo visit, but you can also order a small portion of gyoza to have on the side without overdoing it. For a family visit, I recommend sharing katsudon and ramen so you can try a variety of dishes.
