Seaweed-wrapped beef rib sotbap in Gagyeong-dong, Cheongju: Sorori

In short

Sorori Sotbap Gagyeong Direct Branch is a pot rice (sotbap) restaurant near Cheongju Ipark in Gagyeong-dong, Cheongju. On an early lunch visit the writer ordered the beef rib pot rice at 16,000 won and the Korean beef intestine pot rice at 15,000 won, moved the rice into a bowl, wrapped bites in seaweed, then poured water into the hot pot to make nurungji (scorched rice). With a clam-packed seaweed soup and seasoning that never turned salty, the whole table was cleared.

Here's my review after eating a beautifully made pot rice (sotbap, rice cooked and served in an iron pot).

I've noticed there are quietly more and more pot rice restaurants around these days. A hearty bowl of pot rice is such a satisfying meal, and it feels especially fitting in this kind of nice weather.

Among all of them, my number one pick — this is my review of Sorori Sotbap, a Gagyeong-dong pot rice restaurant.

From outside you can see diners through the floor-to-ceiling windows — it's always packed, and everyone looked like they were enjoying their pot rice so much that I was curious.

Quiet dining hall at Sorori Sotbap during early lunch hours

It was such an early lunch that there were only a few tables, but by the time I finished eating, plenty of gatherings and get-togethers had filled the place up.

I also spotted tables reserved with seats saved ahead of time — it's a neat, tidy spot that would work well for treating someone to a meal.

It didn't take long at all — the dishes came out quickly. First up, the beef rib pot rice.

Topped with my favorite kind of seasoning and thick, well-grilled beef ribs, the portion was quite generous.

Pot rice basically comes served on a tray with side dishes, seaweed soup, and various banchan (side dishes). The rest of the side dishes pair really well with the pot rice too.

How to eat Sorori Sotbap: seaweed wraps and side dishes

The best way to enjoy Gagyeong-dong's favorite pot rice restaurant, Sorori Sotbap, is:

Scooping pot rice out into a bowl
  • Scoop the rice and toppings from the pot into the bowl provided
  • Pour the water from the mini kettle into the pot to make scorched rice (nurungji)
  • Enjoy the scooped-out pot rice
  • Also wrap it in seaweed

Pretty simple, right?? Pot rice can seem like a static, old-fashioned dish, but eating it this way — mixing it up and enjoying it in different steps — turns out to be fun, with plenty of variety in flavor and a genuinely enjoyable meal.

First, let's dig into the beef rib pot rice. The beef was really tender.

Mixing the sauce with the cooked meat and wrapping it in seaweed just melts in your mouth. The meat at Sorori Sotbap, Gagyeong-dong's favorite pot rice restaurant, is really fresh.

The juices stayed locked in, and eating it with the sauce made the seasoning just savory enough — really good.

The rice was also perfectly fluffy and cooked well, so mixing it all together sent the umami through the roof. Next up was the Korean beef intestine pot rice.

Turns out this one is right up my alley?!?!

Korean beef intestine pot rice drizzled with soy sauce

It felt almost like I was in Japan — the soy sauce is so refined and savory, and I sprinkled on plenty of the self-serve flakes too.

At Sorori Sotbap, Gagyeong-dong's favorite pot rice restaurant, the Korean beef intestine is so tender, and the sauce soaks in deeply, so piling it on the rice created a huge burst of synergy.

Wrapped in seaweed with a bit of wasabi, it's absolutely amazing.

Sorori Sotbap, Gagyeong-dong's favorite pot rice restaurant, wasn't as salty as I expected — the seasoning was really well balanced.

Seaweed soup filled with clams

The seaweed soup is loaded with clams too. It pairs really well with the pot rice. It went down so smoothly, and partway through I wrapped some in seaweed and ate that too.

Finishing with nurungji (scorched rice) in the pot

Next time I'll definitely have to order a different pot rice. I ate through the scooped-out rice so fast that I emptied the bowl in no time, but there was still scorched rice left, and I was so happy.

I scraped the scorched rice out of the pot and topped it with side dishes — this right here is the ultimate Korean-style finish.

The seasoning was just right, and it was such a clean, satisfying, filling meal — a really happy one. If you're in the area, take care of yourself with a nourishing bowl of pot rice at Sorori Sotbap, Gagyeong-dong's favorite pot rice restaurant, and enjoy the flavor too.
