Kalguksu and pork bossam on a rainy weekday lunch in Suwon: Daseon
In short
Daseon Kalguksu Main Branch is a 25-year-old kalguksu (knife-cut noodle soup) and bossam (boiled pork wraps) restaurant tucked in an alley near Suwon Station, Gyeonggi. On a rainy weekday lunch, a couple ordered kalguksu, jang-kalguksu (spicy soybean paste noodle soup), and a medium pork bossam, starting with pre-meal barley rice and fresh kimchi before the smell-free, herb-scented bossam. A packed-but-no-wait lunch that makes a solid, filling choice near Suwon Station.

A local favorite near Suwon Station
Walking past the busy main streets around Suwon Station into a quieter alley, a blue signboard with the usual waiting-line energy catches your eye. Already famous among locals as a 25-year-old hangover kalguksu and tender bossam spot, here's my honest take on the flavor behind Daseon Kalguksu's reputation!

Full even on a rainy weekday lunch — any wait?
From the reviews, I figured there might be a wait, and sure enough! Even on a rainy weekday lunch, the restaurant was packed with customers. Looking at the standing sign out front, I noticed it's been featured on several TV shows — good food really does get around fast!

What we ordered
- Kalguksu x1
- Jang-kalguksu x1
- Medium pork bossam x1

Pre-meal barley rice and savory kimchi, served right away
As soon as we sat down and ordered, out came the pre-meal barley rice and the umami-rich kimchi that's a specialty at kalguksu spots. Topped with crunchy radish salad, a drizzle of gochujang (red chili paste), and mixed together for a big bite — it really woke up my appetite before the real meal even began 😎.

Well-seasoned, tender bossam with zero funky smell
Just as we were finishing the barley rice, the main dish — pork bossam — made its entrance ✨. Kept warm over a gentle gas flame, the bossam had a subtle herbal aroma and absolutely no off smell. The ratio of lean meat to fat was spot on, so it was tender and savory without being dry at all!

The kick of pairing it with savory kimchi
The fresh kimchi — the heart of any kalguksu-bossam specialty restaurant — was tangy and savory enough that even without ssamjang (dipping sauce), pairing bossam with just the kimchi genuinely melted away the day's fatigue...? Seeing the beautifully colored bossam arrive, I instantly understood why every table in this large restaurant was full-! We drove there so we couldn't enjoy alcohol with the meal, but I was really craving makgeolli or dongdongju (unfiltered rice wine) ღ.

Clean-broth kalguksu, perfect for Suwon Station lunch
With bossam filling us up rich and satisfying, it was time to finish with a clean-broth kalguksu, right haha. The '25-year hangover kalguksu' reputation makes instant sense — the noodles were chewy while holding onto the broth well, making for a great, smooth slurp 👏. Top it with a piece of tangy kimchi and slurp away — a hearty, perfect lunch!

Craving a spicier broth? Try the jang-kalguksu
My husband, chasing a rich, spicy broth on top of the deeply steeped kalguksu base, picked the jang-kalguksu (spicy soybean paste noodle soup) collab — and it was absolutely the right call! The thick, tangy spiciness unique to jang-kalguksu had us sweating and feeling instantly refreshed with the first bite 👏.

The pork bossam's color was so beautiful too ✨. I've visited bossam places before where the meat had a gamey smell or was dry, but here there was no off smell at all, and the meat was so tender 👍🏻.

Suwon kalguksu and bossam, summed up
The combination of a deep, refreshing kalguksu broth and tender, smell-free bossam was excellent at this 25-year-old local favorite near Suwon Station — and thankfully we got a hearty lunch in with no wait! Whether you want to fill up near Suwon Station or enjoy proper bossam and kalguksu with a cold drink, I recommend Daseon Kalguksu Main Branch near Suwon Station as a choice you won't regret 😎!
