A place to properly enjoy everything from chewy, savory gopchang and makchang to the final fried rice.
When you're trying to figure out dinner around Sindang Station, gopchang (grilled beef intestines) is one of those dishes that naturally comes to mind. Savory, chewy beef gopchang pairs well with a drink, and finishing with fried rice makes for a satisfying meal. This time I visited Jinseong Hanwoo Gopchang near Sindang Station, a place I'd previously taken my parents to for a delicious meal. This time I ordered the gopchang and makchang I remembered enjoying so much, plus kkakdugi-jeolim-maneul-yangbap for a filling dinner.
Where is Jinseong Hanwoo Gopchang, and what are its hours?
Coming up from Sindang Station Exit 7, the entrance of Jinseong Hanwoo Gopchang is almost immediately there. It's open daily from 12pm to 11pm, and until midnight on Fridays and Saturdays.

Jinseong Hanwoo Gopchang's main menu is beef gopchang, daechang, and makchang — with so many customers coming through, the ingredients turn over quickly, which seems to be why the quality of the beef gopchang and makchang is so good.

Before the gopchang arrived, I ordered a somaek (soju-beer mix), which is basically essential with beef gopchang. Gopchang is delicious on its own, but the savory flavor really shines when paired with a cold drink, and most of the other tables seemed to be drinking too. That said, it wasn't overly loud — you could still have a normal conversation.

Three kinds of house-made kimchi come as the basic side dishes. When eating something rich like gopchang, tangy, refreshing kimchi in between bites is great for resetting your palate, and having several varieties made it fun to switch between them. The freshness really stood out since it's house-made — personally, the kkakdugi (cubed radish kimchi) suited my taste the best.


Alongside this, a soy-based house dipping sauce is provided to eat with the gopchang, and a complimentary steamed egg comes out too. The warm, soft steamed egg was nice to nibble on as a drinking snack before the main dishes arrived.

After a short wait, the ordered beef gopchang and a plate of makchang arrived. Another advantage of Jinseong Hanwoo Gopchang is that the intestines don't come out completely raw — they arrive partially cooked already, so grilling takes less time.

What stood out most here was the use of a timer to grill the gopchang at exactly the right moment. You set the timer at the table, and when it's time — the moment the gopchang is at its most delicious — a staff member comes back and cuts it up for you personally. Beef gopchang gets tough if overcooked, but is unpleasant to eat if undercooked, so timing is everything — having a staff member check and handle it directly meant I could just relax and wait, which was great.


What does kkakdugi-jeolim-maneul-yangbap fried rice taste like?
While the gopchang and makchang were still grilling, the rice dish arrived. I ordered the kkakdugi-jeolim-maneul-yangbap, a carb dish that would've been a shame to skip. It looked appetizing even before mixing, with all the ingredients laid out, and turned even more appealing once mixed together thoroughly. Unlike typical gopchang restaurant fried rice, this one has cubed radish kimchi and pickled garlic mixed in, giving it a crunchy texture and a tangy, salty flavor. It was great to eat partway through the gopchang, or as a dessert-style finish.


Once the gopchang and makchang were cooked enough, a staff member trimmed them into easy-to-eat pieces, and I waited a bit longer as instructed before digging in. This kind of attentive staff care while grilling is, I think, one of the reasons people keep coming back to Jinseong Hanwoo Gopchang, a beef gopchang favorite in Sindang-dong.

Why order gopchang and makchang together
Once cooked, the gopchang had a golden, slightly crispy exterior, while the inside carried that savory flavor unique to gopchang. The chewy texture particular to beef gopchang was just right, making it hard to stop reaching for more. Dipped in the house sauce, the umami adds even more depth and pairs well with the savory gopchang flavor. Eating it plain versus dipped in sauce gave two different experiences, so it was fun to alternate.
The makchang had its own appeal too, with a firmer, chewier texture distinct from the gopchang. Ordering the savory gopchang together with the chewier, more textured makchang meant more variety in every bite than sticking to just one cut, so it never got old. If you're looking for beef gopchang in Sindang-dong, I'd recommend trying gopchang and makchang together.
Is Jinseong Hanwoo Gopchang in Sindang worth it?
From the clean table setting to the house-made kimchi, the complimentary steamed egg, and staff who even set a timer to grill the beef gopchang and makchang just right, I got to enjoy delicious gopchang and makchang without any hassle. Not having to worry about grilling it myself and still getting it at its most delicious was especially nice. Enjoying savory gopchang and chewy makchang together, with kkakdugi-jeolim-maneul-yangbap as a side, makes for a very filling meal. Jinseong Hanwoo Gopchang feels like a great Sindang-dong restaurant for a drink, or a solid choice if you're looking for a proper beef gopchang restaurant near Sindang Station.
