The menu, and why the sang loin katsu sells out before closing

Here's the menu! We arrived close to closing time, so the limited-quantity sang loin katsu was completely sold out, sob. We ended up ordering the Jeju black pork assorted katsu and the YBD assorted katsu!
The set table: side dishes and a surprisingly spicy soup


Barley tea and utensils are set up above each pair of seats! In front you get whole black pepper / salad dressing / truffle oil / wasabi ready to go!

Tonkatsu sauce and kkakdugi (radish kimchi) come out first!
Rice and soup come out too! (They'll give you more if you ask ✨️) The rice is so sticky and every single grain feels alive! And ‼️the soup is really, really spicy‼️ Definitely be careful with that ✨️
Jeju black pork assorted katsu at Hets Jeonpo

Here's the Jeju black pork assorted katsu!

You just pour the dressing over the salad (yuzu mayo dressing)!

The sheen on the fat layer of the loin katsu is amazing ✨️ This part is genuinely soft and delicious!

The tenderloin (hire) katsu was also cooked perfectly, with a slight glisten of fat!

They said you can mix the sauces to your taste! I tried it with just salt first, and you could really taste the firm, clean savoriness of the Jeju black pork itself!


Still, since I love truffle oil, I drizzled it on the loin katsu and tenderloin katsu separately and ate them with wasabi — so good ✨️

For the leaner cross-section outside the fat layer, mustard + tonkatsu sauce + pepper was a delicious combo ✨️

Piling on some salad tastes great too 😋
YBD assorted katsu: how it differs from Jeju black pork

Here's the YBD assorted katsu! Y for Yorkshire, B for Berkshire, D for Duroc — shortened to YBD!

Honestly they looked the same on the outside, but the taste was different once I tried them!! The Jeju black pork was firm and clean-tasting, while the YBD was a bit softer and fattier! Both are delicious, so I think it just comes down to preference — pick whichever you like more haha (personally, Jeju black pork was more my style ✨️)
Truffle oil and wasabi sauce: the balance Hets aims for
The batter isn't too crispy or too soggy — it has that light, crunchy-yet-tender bite! The thickness isn't too thick or too thin either, so you can eat it all the way through without getting tired of it haha. Overall the balance was great! It was a really satisfying meal 😋
