Jeonju galbi restaurant with raw beef cold noodles: Ubookgeum

In short

Ubookgeum Saenggalbi Seosin Branch is a charcoal-grilled beef short rib (saenggalbi) restaurant in Seosin-dong, Jeonju, just behind Lotte Department Store. Two women shared one 500g plate of Ubookgeum short ribs for 58,000 won and added yukhoe bibim naengmyeon (cold noodles with raw beef tartare) for 12,000 won, and the staff's grilling service — trimming the meat right off the bone at the table — was the highlight. Ubookgeum Saenggalbi suits anyone who isn't confident grilling beef, as well as team dinners and family meals.

Inside Ubookgeum Saenggalbi: a wide hall built for group dinners

The interior is spacious and clean. There were families visiting as well as groups having get-togethers. With a big space and lots of tables, it seems like a great spot for gatherings or company dinners.

For anyone curious about the menu — Ubookgeum Saenggalbi Seosin Branch has beef and pork, plus a surprisingly wide range of lunch specials like galbitang (short rib soup), yukhoe bibimbap, seolleongtang, and yukgaejang!

Today I ordered one plate (500g) of Ubookgeum raw short ribs. Price: ₩58,000. FYI, one plate was just right for two women!

Side dishes: scallion kimchi, myeongi leaves, steamed egg and doenjang jjigae

Side dishes that go perfectly with the meat. Scallion kimchi, seasoned bean sprouts, wild garlic leaf pickle, baek kimchi (white kimchi) — such a wide variety, great for mixing things up with the meat. Perfect for when you're getting a little tired of just beef, rotate through the sides.

Steamed egg and doenjang jjigae (soybean paste stew) also come out. The seasoned bean sprouts had a slight jjolmyeon-noodle-like taste that was really good, and the stew looked plain but was tasty too, ugh. The side dishes overall were delicious.

Charcoal-grilled short ribs the staff cook for you

They set up the charcoal first.

The color of this meat, honestly — the visuals were so good I took like 50 photos and had to narrow them down, hahaha. You get the bone-in cuts since it's raw short rib after all.

I don't know how to post fewer photos... it just looks too good. The staff cut and grill each piece one by one.

You just sit there and the meat arrives, done. They grill it from start to finish, so it's great for people who aren't confident grilling beef themselves, or for group dinners. The meat is — I can't even find the words — it melts in your mouth.

Sauces at Ubookgeum: always ask for the wasabi

The dipping sauces for the meat are salt, shiitake-wasabi sauce, soy sauce, and wasabi. They gave us wasabi when we asked. I was surprised it was such high quality wasabi. It's delicious, so definitely ask for it!!!

The soy sauce wasn't the usual sesame-oil sauce taste I expected — it had a slightly sticky, sweet flavor. Spicy cheongyang chili peppers added a nice kick to it.

Meat trimmed off the bone from the short rib cuts

The real highlight: staff trim the meat off the bone

Even the bone-in cuts get sliced and grilled piece by piece, trimmed so you only have to eat the meat itself. I've seen places grill the meat for you, but this is the first time I've seen a place trim the bones too!

Especially at group dinners, don't you sometimes want to gnaw on the ribs but can't, and end up wasting meat? This would be so perfect for that 🙂↕️

Yukhoe bibim naengmyeon, 12,000 won: as much raw beef as noodles

I also ordered the yukhoe bibim naengmyeon. Cold noodle broth comes on the side too, haha.

Yukhoe bibim naengmyeon topped with a generous amount of raw beef

Is the amount of yukhoe (raw beef tartare) even real? There's as much yukhoe piled on top as there is noodles... it was ₩12,000, and honestly the yukhoe alone seemed worth ₩12,000... The taste of the yukhoe bibim naengmyeon has a strong sesame oil flavor, real nutty bibim-naengmyeon style!

Plum tea and sujeonggwa enjoyed as dessert

It's been a while since I had this, hahaha. They also had plum tea and sujeonggwa (cinnamon punch), so I finished the meal sipping some as dessert 🍵

Is Ubookgeum Saenggalbi Seosin Branch worth it?

The side dishes were tasty across the board and the quality of the meat was really good...! The grilling service, where they grill and trim everything from start to finish, was excellent. Overall, there was nothing to complain about — a place you'll definitely walk out of satisfied 🤤 If you're looking for a great beef restaurant in Jeonju, this is it!!! Even bringing your parents here, I think they'd be completely satisfied 👍
