When I’m craving warm soup dishes like these days, I think shabu-shabu is such a neat yet satisfying option. This time, I visited Deungchon Shabu Kalguksu Giheung Station Branch. I stopped by because I wanted shabu-shabu or kalguksu near Giheung Station, and I was happy with how generously I could eat :)

And when it comes to Deungchon Shabu Kalguksu, you can’t leave out the minari (water parsley) and spicy broth! With beef, kalguksu (knife-cut noodles), and fried rice at the end all in one meal, it was really filling 💚❤️

Menu

Shabu-Shabu Loaded with Minari
Once the dishes were brought to the table one by one, the spread was more generous than I expected, so I got busy taking photos first.

The first thing that caught my eye was, of course, the shabu-shabu pot overflowing with minari! There was so much piled on that I could barely see the pot—I honestly wondered, “Can you really put in this much?” haha
When you cook the minari thoroughly in the broth, it wilts and becomes tender while its distinctive fresh flavor comes through. Added to the spicy broth, it kept the meal from feeling rich or greasy, and I just kept reaching for more.
Beef and Minari Together
Beef, another shabu-shabu essential, was ready alongside it. I lightly cooked the thinly sliced beef in the bubbling broth, and it was tender and clean-tasting, pairing wonderfully with the minari.
Picking up a bite of minari together with beef gave such a lovely balance of fresh and savory flavors. If you like spicy broth, I recommend having the beef and minari together!
Kalguksu After Shabu-Shabu
Another appeal of Deungchon Shabu Kalguksu is that the meal doesn’t end with the shabu-shabu alone!

After eating some of the meat, I added kalguksu to the remaining broth. The meat and minari had made the broth richer, so it tasted especially good once the noodles went in.
The chewy noodles with spicy broth kept me eating even as I started to get full. Personally, I felt that shabu-shabu → kalguksu is the proper Deungchon Shabu Kalguksu course 💚❤️
Egg-Yolk Fried Rice to Finish
And the final dish I was most looking forward to! Fried rice, of course.

I made fried rice using the broth left after the shabu-shabu, and the egg yolk sitting on top of the rice looked so cute from the start. Mix and stir-fry the egg, rice, and assorted vegetables well, and you have fragrant, mild fried rice!
Finishing with fried rice after the spicy shabu-shabu left me comfortably full and made the meal feel properly complete. Personally, I’d recommend eating it in this order: shabu-shabu → kalguksu → fried rice 🤍✨
