Hotcho Seongsu is a Japanese restaurant in Seongsu-dong that claims to recreate okonomiyaki, the soul food of Hiroshima, exactly as it tastes locally. Okonomiyaki has become so common and familiar by now that we can easily make it at home, but finding one that's genuinely, mouth-fillingly delicious turns out to be surprisingly hard.

That's when I came across Hotcho Seongsu in Seongsu-dong, which claims to recreate the authentic taste of Hiroshima. A great opportunity came up to try authentic okonomiyaki here, so I visited with a lot of excitement.

Osaka-style vs Hiroshima-style okonomiyaki: what's different

The Hiroshima style served at Hotcho Seongsu builds ingredients up layer by layer on top of a thinly spread batter. I had always assumed okonomiyaki meant mixing the batter and ingredients together and pan-frying it like jeon (a Korean savory pancake). Turns out that mixed-and-fried method is actually 'Osaka-style'!
