Tonkotsu ramen in Sokcho with extra char siu and egg: Ichiba Ramen

If you're wondering what to eat on a trip to Sokcho and want a really filling bowl, I want to recommend Ichiba Ramen!! As someone who loves tonkotsu broth, I went hunting for a good ramen spot in Sokcho and found this place — one bite in and I knew I'd found the right spot haha.
Where is Ichiba Ramen in Sokcho, and where can you park?


You can park along the road in front of Ichiba Ramen or on the side of the building. If those spaces are full, there are alley spots in the nearby residential area or lots along the beach. There were plenty of spots on the road out front, so I just parked and went in!



Inside Ichiba Ramen: open kitchen and seating
The moment you walk into Ichiba Ramen, it clearly has that proper ramen-shop presence. It's an open kitchen, so you can watch the chef cooking right there while you wait — no time to get bored. Since the kitchen is visible, you can see the ingredients are prepped cleanly and the kitchen itself is spotless, which instantly builds trust in the food.

Ordering is done via kiosk, and the lineup is solid: Tonkotsu Ramen ₩9,000, Special Tonkotsu Ramen ₩15,000, Karai Ramen (spicy) ₩9,500, Miso Ramen ₩10,000, Mania Tonkotsu (salty) ₩9,000, and Hiyashi Chuka (cold ramen) ₩13,000. There's also butadon, char siu don, and karaage, perfect as side dishes!
We ordered two bowls — Special Tonkotsu Ramen and Tonkotsu Ramen — with an added egg on the Special Tonkotsu Ramen, and added char siu plus egg on the Tonkotsu Ramen, loading up the toppings for a really filling order!



Every table at Ichiba Ramen has pickled radish, pepper, and even a hair tie ready to go, so you can eat comfortably. They're also running a receipt review event, so join in for an even more filling meal.

The two bowls of ramen finally arrived and I fell for the visuals right away. Since Ichiba Ramen is semi-self-service, you just pick up your bowl once the chef finishes cooking!

Special Tonkotsu Ramen (15,000 won) with an extra egg
The Special Tonkotsu Ramen comes piled with big, thick-cut char siu, and the size of that char siu is seriously impressive from the start. Adding a soft-boiled egg on top made it look filling just to look at!


The outside is lightly charred with a smoky aroma soaked in, while the inside has a soft, melt-in-your-mouth texture.


The egg is cooked to just the right soft-boiled point — cut it in half and the yolk pops and oozes out beautifully. Mix that yolk into the broth and take a bite, and the savoriness doubles. Definitely recommend adding the soft-boiled egg, it's so good!


Poke the char siu with your chopsticks and you'll find the outside lightly charred with a smoky aroma, while the inside is soft and melts away.

Add a spoonful of the minced garlic that comes with the ramen and stir it in — the broth flavor deepens and gets a little sharper, which is the signature kick of Ichiba Ramen, a standout Sokcho ramen spot.

Tonkotsu Ramen (9,000 won) with extra char siu
The Tonkotsu Ramen comes with thinly sliced char siu, and adding extra char siu on top means the slices stack up layer after layer — truly generous. With every bite of meat, the juices spread through moistly, and it was worth adding the extra char siu just for this.



What does the tonkotsu broth at Ichiba Ramen taste like?
The broth is really the core of this dish — it's rich and deep, which makes it that much more delicious. Take a spoonful and the milky, thick broth spreads through your mouth, with deep umami hitting first rather than any greasiness. It's hard not to admit this is a genuine Sokcho ramen spot.
