Rice balls and perilla wraps at a 20-year Seomyeon ribs spot: Sinchon

In short

Sinchon Yangpuni Seomyeon Main Branch is a spicy braised short rib restaurant that has held the same spot near Seomyeon Station in Busanjin, Busan for 20 years. The writer ordered the yangpuni ribs for two at spice level 2, added pour-over cheese and rice balls, wrapped bites in perilla leaves, and had staff debone the ribs at the table. The heat comes purely from chili peppers with no capsaicin, making it a solid pairing for drinks too.

I heard the recipe has been made by the owner's grandmother-in-law and loved for 20 years, so to fully enjoy that old-school restaurant vibe, I headed to the main branch ☑️

Weekday evening atmosphere and wait times

Even on a weekday evening the place was full of regulars — couples on dates, friends catching up, group gatherings, and quite a few foreign tourists too?!!

Interior with customers on a weekday evening

The atmosphere is clean and comfortable, not feeling its age at all. There are plenty of tables, but I heard weekend evenings can get so busy there's a wait, so check the waitlist with Tabling in advance‼️

They never use capsaicin here — the heat is controlled purely with chili peppers, so spice-lovers absolutely need to check this place out 🔥

How many spice levels are there?

Level 1: A flavor anyone can enjoy Level 2: Where spicy begins (hotter than Shin Ramyun) Level 3: Properly spicy (real cheongyang chili heat) Level 4: Spicier than cheongyang chili

The spice intensity goes up to 4 levels, so pick based on your taste — and you can add extra spicy sauce too!

The seasoning is made with sun-dried salt, soy sauce, and salted shrimp, then aged for 15 to 60 days before use — apparently that gives it delicious heat plus an easier stomach the next day.

Side dishes and savory soup

Once you order, they set the side dishes first — corn salad, acorn jelly, pickled onion, soup, and perilla leaves〰️

This savory soup especially hit the spot!!! It's a familiar flavor, but rich and thick, perfect for neutralizing the spice in between bites 👍🏻

Looking at it again, my mouth's watering — drool 💦

Braised ribs piled high with bean sprouts and scallions

The back ribs are hiding beneath a mountain of bean sprouts and scallions 👀 As a vegetable lover, I really love this hearty visual.

Staff debone the ribs for you, so you can just relax and eat!! I turned into a baby bird again today ••

Once the vegetables wilt down and it's ready to eat, finish it off with the pour-over cheese~~🧀

Bubbling braised ribs topped with pour-over cheese

It looks so good bubbling away, and even at level 2 a spicy aroma comes right at you.

Cheese lovers should definitely add extra — the savoriness is a must

Made with 100% domestic back ribs, so there's no gamey smell — tender, well-seasoned, and totally stress-relieving. The crunch of the bean sprouts and scallions is great, and the heat builds gradually toward the end more than the start 🥹

And of course, when it's spicy, you dip into the special mayo sauce 😋 It's sweet and savory, a perfect match with spicy braised ribs

And don't even get me started on the soft rice cakes and glass noodles 🥺 They come generously included by default, and you can order more if you want extra after trying them.

Order rice balls ahead, and don't skip the perilla wraps

For the best experience, order the rice balls in advance so they're made into bite-sized pieces ✌🏻 They're a solid classic, made with sesame oil, seaweed flakes, and pickled radish.

Top a rice ball with meat and cheese, add some pickled onion, and take a big bite 👅

A bite of rice ball topped with meat and cheese

With fresh perilla leaves available, you can also wrap bites neatly 🥬 The portion was so generous that even the rice balls and cheese were leftover, so I couldn't get to the potato pancake — guess I'll have to come back and take that on next time too.

If you're looking for a hearty, spicy dish to pair with drinks, give this a try~

Dessert was a cute little xylitol candy 🍬 Since I was drinking too, the comfortable indoor restroom was also a nice plus — a satisfying find near Seomyeon Station!
