Sinchon Yangpuni Seomyeon Main Branch is a great spot to hit up in Seomyeon whenever you're craving spicy braised short ribs. The restaurant has run for 20 years focused entirely on galbijjim (braised short ribs), built around a secret sauce passed down from the owner's grandmother-in-law. It uses domestic short ribs and adds no capsaicin, which is another distinctive point. This time I ordered the yangpuni galbijjim at level 2 and made sure to work through the kimchi and fried rice too.

Sinchon Yangpuni is close to Seomyeon Station, so it's easy to reach by public transit. The galbijjim comes out already cooked, and staff trim it into easy-to-eat pieces, so there was little hassle picking meat off the bone myself.

This time I went with level 2. Rather than being overwhelmingly spicy from the start, the sauce that arrives first is sweet and savory, and as it simmers the sauce thickens and the flavor deepens. If you want it spicier partway through, you can add extra spicy sauce to adjust to your taste. This isn't a galbijjim that's just spicy for spice's sake — the seasoning pairs so well with rice that I kept reaching for more.

The ribs are genuinely tender

Staff trim the rib bones for you. They're already braised so thoroughly that a gentle tug pulls the meat right off the bone. The meat itself wasn't tough or dry at all — it had a soft, tender bite. Sauce matters a lot in galbijjim, but tough meat can ruin the experience; here, the tender texture made the whole dish that much more satisfying.

What I personally enjoyed most this meal was the aged Jeolla-do kimchi (mukeunji) topping. About half a head of kimchi comes out, and simmering it together with the galbijjim sauce adds the kimchi's distinctive tang.

The savory depth of the kimchi layered onto the sweet-spicy galbijjim made the overall flavor much richer. If you like aged kimchi, I'd personally recommend adding it.

The sauce served alongside the galbijjim was distinctive too. It tasted similar to the garlic sauce you get at pizza places — dipping the spicy galbijjim in it mellows out the heat nicely. The corn mayo also had a garlicky flavor, making it a great side to pair with the ribs. Alternating between spicy and savory bites turned out to be a better combination than I expected.

Skipping the fried rice after galbijjim just feels unfinished. Since the sauce itself is so good, the fried rice was naturally delicious too. You can fry it yourself, but for an extra ₩1,500 staff will cook it for you.

Staff make it far more skillfully than I could myself, so this time I let them handle it. Scraping up every last bit of leftover sauce with the rice is what really made the meal feel complete.
