I went to Hyoeunok Gyeongju Branch for dinner to try the local favorite: a mountain of beef ribs nicknamed "Ppyeoberest" (bone Everest) in the hot pot.

You can park in the restaurant's own lot right out front. If it's full, there's a free public lot across from the main entrance. Having a dedicated lot made getting there by car really convenient.

Whoa, the inside has a somewhat antique feel! The dazzling mother-of-pearl cabinets caught my eye right away.

Overall it has the comfortable feel of a traditional Korean restaurant without being too old-fashioned — the hanok mood fits Gyeongju's regional character, and the atmosphere worked well for a meal while traveling.

Ordering is done via tablet at the table. There's a wide range of menu items — tteokgalbi (grilled short rib patties), hanwoo yukhoe bibimbap (raw beef mixed rice), hanwoo yukhoe makguksu (raw beef cold noodles), and more. I went with Hyoeunok's most popular dish, the Gyeongju minari beef rib hot pot at mild spice level (₩65,900).

How to eat the beef bone ribs

The beef ribs looked juicy and tender even before I touched them — wrapped with bean sprouts and minari (water dropwort) and dipped in the sauce, they were genuinely soft and delicious.

Eating vegetables and minari alongside the meat felt way less heavy than eating meat alone the whole time.

Is the broth spicy? Rich rather than hot

You can add beef brisket and eat it shabu-shabu style too. Rather than being aggressively spicy, the hot pot has a base of savory, rich flavor drawn out from the beef bones. Mushrooms and vegetables in the broth help balance out the meat's richness somewhat.

Finishing with kalguksu noodles and gondre porridge

The hot pot broth pairs perfectly with kalguksu (knife-cut noodles) too! After eating your fill of meat and vegetables, adding kalguksu noodles to the broth gives you a whole different experience from the broth you had earlier. The rich broth soaks right into the noodles, making the kalguksu absolutely delicious. The broth turns silky once the noodles go in — so good 👍

And to top it all off, gondre rice porridge! This porridge was a real standout. Finishing with the gondre porridge left my stomach feeling settled, wrapping up a filling yet clean meal in Gyeongju.
