While looking for good meat near Yeongdeungpo-gu Office, I visited Dongnaejeong Yeongdeungpo-gu Office Main Branch.

We started with the pork neck. Note that it can only be ordered from 2 servings, so keep that in mind when you visit.
Ah.. everyone, just look at this beautiful sight.

Since the pork neck is so thick, it can easily turn tough if grilled wrong.

But the staff locked in the juices and grilled it to just the right doneness, so it was seriously so good ㅠㅠ

The outside browned nicely while the inside kept its moistness.

Compared to the thinner pork neck I'd had before, this thicker cut gave a much better chew.
Dongnaejeong's own tip for eating the pork
- Dip it lightly in shiitake salt to taste the meat as it is
- Dunk it generously in the signature melchorim (anchovy sauce reduction)
- Pair it with the various side dishes — squid rice-syrup, garlic scape salad, mustard leaf kimchi, and more

First I dipped it lightly in shiitake salt to taste the meat's natural savoriness.
Then, as the staff recommended, I dunked it deep into the signature melchorim. The salty umami made the pork neck taste even better.

The mushrooms grilled alongside were also surprisingly good (surprising in the way the older folks these days say lol). Usually if you leave mushrooms on the grill too long they dry out, but Dongnaejeong's mushrooms were full of moisture inside — juicy the second I bit in (my eyes went wide eating them).

After finishing 2 servings of pork neck, it felt like too soon to stop 😗 so we added a serving of pork belly haha.

Where the pork neck was clean and savory, the pork belly had a richer, fattier flavor. The staff also grilled the pork belly to just the right point. A bite of nicely browned pork belly with melchorim on the side — the savoriness and saltiness paired so well it made me want a soju-beer right away. We ended up mixing soju and beer for a refreshing round.

Melchorim bibimbap: just order a 1,000 won bowl of rice
Dongnaejeong doesn't have a separate bibimbap (mixed rice) item on the menu. If you order a bowl of rice and ask the server, they'll stir-fry it into the leftover melchorim. If there's any meat left, try piling it on top of the fried rice.
I heard that ordering a bowl of rice means the staff will mix it into the leftover melchorim sauce for you, so I asked right away.

The melchorim we'd been dipping our meat in transformed, in the end, into melchorim bibimbap.

The umami was so deep and it was such a unique treat that even full, I kept reaching for more. And it was even better knowing we didn't have to pay extra for it.
