Job-celebration chicken baeksuk in Asan: Oneungi Shabu Baeksuk

In short

Oneungi Shabu Baeksuk is a Korean restaurant specializing in neungi mushroom baeksuk (whole chicken soup) and samgyetang in Eumbong-myeon, Asan. Celebrating a friend's new job, the writer ordered the neungi nurungji dak baeksuk (65,000 won) and found the meat so tender the bones fell off on their own, with a thick, deep broth. With a 20-person party room complete with a monitor, it's also a great spot for hosting elders' family gatherings.

Here's the entrance! Plenty of parking, and the air feels clean! Restaurants located in places like this are usually a good sign!

They're growing peppers, perilla leaves, and squash right in front of the shop! Everything's growing nicely! Somehow this makes the place feel so warm. There's something homey about a restaurant that grows its own ingredients like this!

This place is also great for grandma and grandpa's celebration parties. There's a separate party room! It fits around 20 people, and inside there's a feast table setup and a monitor! You can show a prepared PPT here, or even sing songs. What a fantastic service!!! Great for visiting together with the whole family, including the elders!

Sign introducing neungi mushrooms

Neungi mushrooms have long been used both as medicine and as food. The ultimate anti-cancer ingredient!

They're also doing good deeds — donating to a welfare center, with a first goal of 9,999 units. Let's all cheer them on together!

Full spread of basic side dishes

Side dishes and ginseng root

The full spread of side dishes arrived! They give you one whole ginseng root per person! Chew on it slowly and you might just live longer! Take your time savoring the aroma while you chew!

Diced radish kimchi, broccoli, julienned radish, and mushroom jeon (pan-fried mushroom) came out. That mushroom jeon is surprisingly delicious. The texture of the mushroom blends really well with the various vegetables. The seasoning on the side dishes overall is on the stronger side!

The broth and the meat — how did it taste?

Whoa, the neungi nurungji dak baeksuk has arrived! Before the meal, a little ginseng tasting! It has a bitter yet sweet taste — you'll know exactly what I mean!

See how thick it looks? The broth is truly rich and deep!

Want a baeksuk so tender the bones practically fall off by themselves?

Baeksuk broth generously filled with neungi mushrooms

It's genuinely so tender that the bones come off on their own! Truly savory with a deep neungi mushroom aroma. No hint of that medicinal-herb smell — just a nutty, clean flavor! The kind of taste that keeps your chopsticks going back!

The neungi mushrooms are also very generously portioned! They have a bit of crunch and a strong mushroom aroma! The broth made from the mushrooms and savory scorched rice needs no explanation — dip it in a bit of salt!

Piled up with scorched rice, neungi mushroom, and diced radish kimchi like this, you could easily eat five bowls!

Dessert: neungi golden mushroom tea and sikhye

Finally, dessert — neungi golden mushroom tea or sikhye (sweet rice punch), just like my grandmother used to make, are both ready! I picked sikhye, and it suddenly made me think of her.

That's my review of this neungi baeksuk restaurant in Eumbong, Asan. Maybe this is what body-nourishing food at the tail end of summer is all about.
