When I think of Busan, yang gopchang (grilled beef tripe) comes to mind, so I looked it up and found there's a whole tripe alley in Nampo-dong. There are tons of restaurants on the street and you can really feel that old-school vibe.

Outdoor tent vibes near Jagalchi Station Exit 3
Bupyeong Yang Gopchang, a famous Nampo-dong spot, is close to Exit 3 of Jagalchi Station. They've got tables set up right outside so you get that open-air tent feeling. Red plastic chairs, obviously — classic haha. It's open every day from 11am to 1am, so you can drop by pretty much whenever 👐

I figured it'd be quiet since it was a weekday, but once peak time hit, every table filled up out of nowhere. This is definitely the real deal!!!!

What we ordered for two
They said the stone-pan seasoned tripe (소, cow small intestine) was plenty for two, so we ordered that and later added udon noodles and fried rice. Besides the seasoned version, they also have salt-grilled and hot pot options, plus a bunch of different noodle add-ins, which I loved :)

And if you're in Busan, Daesun soju isn't optional, it's mandatory, right? Hadn't had it in a while — clean finish, no hangover, honestly beat Chamisul.. ha

Basic side dishes and doenjang soup
They set the basic side dishes out right away. Sundubu (soft tofu), geotjeori (fresh kimchi), and — my favorite — salad..! (I love a place that has salad)

This doenjang soup was genuinely so good. Mideodeok (sea pineapple) in there too? You'd never find that back home in Jeolla-do. Anyway it was a little spicy and so tasty that I cracked open a bottle of soju before the main dish even came out ha

Stone-pan seasoned tripe — how much do you get?
The stone-pan seasoned '소' (tripe) arrives!!!! The portion was bigger than I expected, honestly surprised me. Plump yang gopchang with thick, rich sauce — you already know it's good without even tasting it.

See the size of those tripe pieces? Don't worry about the cooking, the staff handles it all. All you have to do is eat.

The sauce isn't just aggressively spicy — it's spicy-sweet with a savory depth that makes it addictive. Eating it with the onions and mushrooms mixed in gave it more texture variety and blended really well with the sauce, making it even tastier.

Start with the heart
You have to eat the yeomtong (beef heart) first! It's chewy yet clean-tasting, really appealing. Not tough at all — the more you chew, the springier it gets, a real treat.

Yang gopchang with Daesun soju — does it get greasy?
Tripe normally has a lot of fat, so eating a lot of it can get a bit greasy, but at this Nampo-dong favorite the sauce pairs so perfectly that there's zero greasiness — I just kept reaching for more. If you've been avoiding tripe because you're worried about the smell, come here right now!
And Daesun goes with literally everything~🤭 The soju kind of disinfects your palate inside, haha. Eating the spicy sauce alongside crisp Daesun cut through any richness completely and I kept going back for more. It matched so well as a drinking snack too — the alcohol just kept flowing.

The udon noodles are a must
Here's a tip: partway through, definitely add the udon noodles. I was debating between that and glass noodles, but the owner recommended the udon and it was truly the best choice ㅜㅜ ♥️
Slurp~~ The udon soaked up the sauce perfectly, and when I took a big bite the noodles were chewy but tender, just the right doneness. They weren't overcooked so the texture held up, and the spicy-sweet sauce clung to the noodles so well that I couldn't stop eating.

Finishing with fried rice and free patbingsu
At this point I felt like I was going to burst, but skipping the fried rice would've been a crime, so we ordered it. And somehow I scraped the pan clean and ate every bit..

I wanted something cold to finish, and then patbingsu (red bean shaved ice) showed up as a free service!?!? Eating it really helped everything settle. Overall, from the yang gopchang to the heart, everything was clean with no funky smell, and it all paired so well with the spicy-sweet sauce — Bupyeong Yang Gopchang 🥹❤️. If you're looking for a great spot in Nampo-dong, I'd definitely recommend visiting. I think I'd order the exact same thing again next time!
