How to cook the black pork belly in the spicy mushroom broth

The black pork belly, freshly set on the table, had that vivid pink color that screams fresh. Here's a tip: once the spicy mushroom broth starts bubbling, taste the plain broth first, then add the grated garlic and chili provided, to your taste. I loaded up on grated garlic and the savory flavor really came alive!

I'd recommend mixing grated garlic and chili into the basic sauces too, to your taste.

Shrimp balls cooked in the broth

The handmade raw shrimp balls I'd been looking forward to were fun — you shape the balls yourself and cook them in the shabu-shabu broth. This thing is a real treasure: the moment I bit in, the raw shrimp's crunchy, bouncy texture completely surprised me. (No wonder it's the best-seller, ㅠㅠ♥)

Both the pork and the beef had their own charm, and both were delicious.. ෆ

We ordered extra napa cabbage and assorted mushrooms, both favorites of mine.

Plate of 12 sheets of rice paper

Rice paper for wrapping (12 sheets), 2,000 won

There's no separate warm water for the rice paper — instead you dip it right into the shabu broth and wrap meat and vegetables in it. The spicy broth's seasoning soaked in moist and delicious, which made it even more appealing!

Finishing course by broth: the rosé risotto

Something unique about this Gangnam restaurant: the dessert course depends on which broth you chose. Since we picked the spicy mushroom broth, our dessert was rosé risotto! A staff member came over and made it carefully at the table — with shrimp mixed in for a bit of chew, and a creamy texture that was excellent. They also served a refreshing omija tea (five-flavor berry tea) alongside, which felt nice for cleansing the palate.

We wrapped up with the matcha ice cream, which was clean and not too sweet! Visually it's a deep, intense green, and one spoonful brings out a subtle, slightly bitter matcha flavor. If you're expecting a very sweet ice cream, keep in mind this one leans bitter and low-sugar, so it might be a hit-or-miss depending on your taste!
