Today I finally went to Minyeong Hwareo Gongjang Moraenae Market Branch in Guwol-dong, Incheon — a place I'd wanted to try for ages since it's known for sushi around here!

Unlike a typical sushi restaurant, Minyeong Hwareo Gongjang runs entirely as a takeout specialty shop.

By running as a takeout-only spot, they cut costs like rent and staffing that come with a dine-in restaurant, and pass that on as good-value pricing for high-quality sushi and live-fish sashimi, apparently.

Looking at the sushi on display, the prices caught my eye — better than I expected! At Moraenae's Minyeong Hwareo Gongjang most sushi is priced above ₩10,000, but egg sushi or regular fried tofu sushi can be had for under ₩10,000, so it's great for a quick, simple sushi craving.

The same-day ingredients, same-day sell-out rule
There was one more thing I really liked — they follow a principle of using up whatever ingredients are prepped that day, on that same day.

Even the best ingredients lose flavor and freshness if stored too long, so knowing they prep and sell fresh every day made me trust the sushi even more while packing it up. And sure enough, while I was there, a staff member kept checking and managing the displayed sushi, haha.

Best of all, I didn't have to wait long in the store — I could just grab the sushi I wanted and have it packed to go.


They also sell live-fish sashimi and mulhoe, not just sushi!

On hot days, freshness can be a worry when carrying home sashimi or sushi, but they give you an ice pack with your purchase, so I felt reassured even packing it up in the midday heat we've been having lately.

I liked the packaging too. Instead of just a plastic bag, they put everything into Minyeong Hwareo Gongjang's own insulated shopping bag.

And inside, they'd tucked in an ice pack as well. Since freshness matters so much for sushi and sashimi, that attention to cold-keeping felt like a thoughtful touch.

What I picked up this time was the special sushi set and the mixed shrimp sushi set! Opening it up at home, the sushi hadn't shifted around at all — packed neatly and cleanly.

Along with the sushi, everything I needed was included — the ice pack of course, plus soy sauce, pickled ginger, rakkyo, and wasabi — so there was nothing extra to prep.


Rice seasoning and the fish-to-rice ratio
Now for the most important part — the taste, haha. Overall the amount of fish to rice was well balanced, and the rice seasoning was just right — not too strong or overpowering.


The ratio of fish to rice was good too, so each piece was easy to eat in one bite!


The special sushi set was nice because I got to try a variety of different kinds, and the mixed shrimp sushi set would satisfy anyone who loves shrimp!

The prices aren't a burden either, so it feels great for eating with family, having a simple sushi meal with friends, or picking up takeout on a day you're craving sashimi or sushi at home.
