The warm soup served first at the start of the meal

Soup, salad and the self-bar at Filling Donkatsu

The warm soup arrived first! You really can't skip the soup before katsu. That first spoonful of soft, warm soup woke up my appetite and set the tone for the meal ahead. Sprinkle on pepper to taste 🧂

A plate of salad with dressing

And there was salad too 🥗 fresh vegetables with a tangy dressing that cut through the richness of the katsu, and it was nice to nibble on lightly while waiting for the mains.

Self-bar with soup, broth, and basic side dishes
Napa cabbage kimchi and broth taken from the self-bar

Any side dish you needed more of, you could get from the self-bar. Soup, broth, and basic side dishes were all on offer, and it was great being able to help myself as much as I wanted. Just remember to only take what you'll actually eat, haha!

I grabbed some napa cabbage kimchi and broth from the self-bar to go with the katsu, just as much as I needed.

Table setting for Filling Donkatsu's signature wrapped katsu

Filling ssam katsu: how does pork cutlet taste wrapped in rice paper?

The Filling wrapped katsu (₩35,000) is one of the signature dishes at Filling Donkatsu Gwangju Cheomdan Direct Store, served with warm water, rice paper, and a variety of sauces. Honestly, this was my first time eating wrapped katsu, so I was really curious to try it (I'd been wondering about it for ages).

An assortment of sauces to go with the wrapped katsu

It came with warm water, rice paper, and a variety of sauces.

You wrap the fried katsu in rice paper with fresh vegetables, which felt like eating a Vietnamese-style summer roll — a fun twist. The crispy katsu, crunchy vegetables, and chewy rice paper came together nicely, making it a light, easygoing dish that anyone could enjoy.

Cross-section of the thick, ice-aged katsu

Filling Donkatsu Gwangju Cheomdan Direct Store apparently uses an ice-temperature aging method that brings out even more flavor and texture in the katsu. They use thicker-cut meat than a typical katsu, then age it to achieve a tender, juicy texture. Thanks to that, you get rich juices and a soft bite from the thick cut of meat, which made it feel extra special.

I piled the katsu and fresh vegetables onto a sheet of rice paper and added plenty of sauce to taste. The crispy katsu, crunchy vegetables, and chewy rice paper made for an unusual, delicious combination. Eating it with the vegetables somehow made it feel a bit healthier, so I felt less guilty digging into katsu.

What is the flat iron steak bibimbap like?

The flat iron steak bibimbap (₩20,500) came topped with a nicely grilled, savory flat iron steak, plus rice piled high with plenty of vegetables — a hearty, satisfying one-bowl meal 🥄

A bowl of flat iron steak bibimbap

The clean, savory flavor of the flat iron steak paired beautifully with the fresh vegetables. Just look at all the ingredients packed in — mushrooms, flat iron steak, scallions, egg, sesame seeds. Colorful, and it delivers on flavor too 🤤

You mix the rice and toppings together thoroughly, and the tender steak, crunchy vegetables, and fluffy rice all came together for great texture. It was that familiar-but-delicious kind of flavor — one no Korean could dislike 👍🏻 A different kind of appeal from the katsu, perfect for when you want a hearty meal.

Dessert after the meal: toast, ice cream and americano

But that's not all ✋🏻 After the meal, there was a simple dessert waiting — toast and ice cream, plus an americano to wrap things up cleanly. Great for relaxing after the meal.
