Ingye-dong pork belly restaurant in Suwon: 5 sauces at Jipbul Taebaek

In short

Jipbul Taebaek Suwon Ingye Branch is a straw-fire Korean BBQ restaurant near Nahyeseok-gil in Ingye-dong, Paldal-gu, Suwon, Gyeonggi. Two servings of straw-fired samgyeopsal (pork belly) plus an order of straw-fired pork neck came with a staff sauce guide that runs through five sauces in order — black sesame salt, seed soy sauce, angelica pesto, neungi mushroom pesto and wasabi — before buckwheat naengmyeon (cold noodles) and hanwoo beef cheonggukjang (fermented soybean stew) closed the meal. From the meat to the side dishes, sauces and rice-and-noodle courses, nothing at Jipbul Taebaek falls short, which makes it an easy booking for an Ingye-dong group dinner.

There was a wait even on a weekday evening, but the waiting area had seating and a little pond with trickling water and goldfish, which was fun to watch.

What does straw-fire searing mean?

Jipbul Taebaek Suwon Ingye Branch is known for searing meat over straw fire, so you can try many cuts including straw-fired samgyeopsal (pork belly), straw-fired pork neck, and udae galbi (prime rib).

They said the straw fire hits 1,000 degrees at peak heat, and I could see the searing happening off to the side — the flames shot up so dramatically I kept glancing over.

The tabletop grill was cleaner than at most other BBQ places, and there was a self-serve bar for lettuce wraps, side dishes, and sauces.

Side dishes and the five sauces

I was surprised how many side dishes came out — each one was tasty, so I kept eating them right alongside the meat.

Close-up of the side dishes

There were especially many sauces prepared: seed soy sauce, black sesame salt, angelica pesto, neungi mushroom pesto, and wasabi.

Two servings of straw-fired pork belly: how staff grill it

I ordered two servings of straw-fired samgyeopsal, and the staff grilled kimchi, bracken fern, and mushrooms along with it.

The grill was wiped clean and even oiled for me, which I appreciated, and since the meat was pre-seared it cooked quickly over the strong heat. The staff member's hands were fast and their grilling skills were great.

The order to try the five sauces in

Once the meat was fully cooked, the staff walked us through the sauce order: black sesame salt first, then seed soy sauce, angelica pesto, and neungi mushroom pesto plus wasabi, all wrapped together with kimchi and rice cake slices — genuinely delicious. My partner's pick was the seed soy sauce, mine was the black sesame salt, but honestly the pestos were amazing too? I really can't choose on this one.

Straw-fired pork neck vs pork belly

We also added straw-fired pork neck, and the smoky flavor really came through — clean and tasty.

The additional order of straw-fired pork neck

The belly had rich, savory fat, while the neck had a nicer chew — each had its own appeal.

Finishing with buckwheat naengmyeon and hanwoo cheonggukjang

For the meal course, we ordered buckwheat naengmyeon (cold noodles) and hanwoo beef cheonggukjang (fermented soybean stew). The naengmyeon was chewy and refreshing, washing away all the oil from the meat.

The cheonggukjang smelled savory from the first whiff and was packed with ingredients — we left completely stuffed.

Who is Jipbul Taebaek Suwon Ingye Branch best for?

From the meat to the side dishes, sauces, and meal course, nothing was missing — I could see exactly why this place is famous on Nahyeseok-gil in Ingye-dong. Since it's open late, it's also a great pick for an Ingye-dong group dinner.

  • Anyone looking for a great BBQ restaurant in Ingye-dong
  • Anyone near Suwon City Hall wanting a special meat menu
  • Anyone who wants to really enjoy that straw-fire flavor

I'd recommend Jipbul Taebaek Suwon Ingye Branch.
