Ilsan ramen restaurant, two bowls shared with extra noodles: Gyedan
In short
Gyedan Ramen Ilsan Main Branch is a tonkotsu ramen restaurant on Bamlidan-gil in Ilsan-dong-gu, Goyang, Gyeonggi. Visiting with her daughter, the writer ordered gyedan ramen (11,000 won), motsu ramen (12,000 won) and tamago-bap (3,000 won), and on the staff's advice added extra noodles for 1,000 won instead of a third bowl, then finished with extra chashu for 1,500 won. With chashu free of any gamey smell and a moist tamago-bap, Gyedan Ramen is an easy ramen stop to share with a child.

If you like Japanese ramen in Ilsan, you've probably heard of Gyedan Ramen at least once. If you're from Ilsan, there's no way you don't know it — it's called the ultimate boss of Japanese ramen around here — and I was craving ramen so I finally went back after a long while. Even when I arrived the waiting line was massive, and once I ate, I understood exactly why it's been this popular for so long!!!!

Seating at Gyedan Ramen: solo-friendly counter and tables

Gyedan Ramen Ilsan Main Branch has a bar table, single seats, and 4-person tables, making it a good spot whether you're eating alone or just grabbing a light meal. The place itself isn't huge, but the bar table and single seats are laid out efficiently, so the space feels well used. Even in a tight space, the flow of the layout was smooth and never felt inconvenient!!
Gyedan Ramen menu prices and the 1,000-won extra noodles tip

Gyedan ramen is ₩11,000 (basic), extra noodles are ₩1,000, motsu ramen is ₩12,000 (basic), tamago-bap is ₩3,000, and extra chashu is ₩1,500. I visited with my daughter and was about to order three full bowls of ramen, but the staff taking our order let us know we could just add extra noodles instead — which let us order more reasonably. Getting a small ordering tip like that made the whole meal feel even more pleasant.
Ordering by kiosk at the table
Every table has its own kiosk, so we could order comfortably without needing to call a staff member over.
How does the gyedan ramen (tonkotsu ramen) taste?
Gyedan Ramen

It's the basic tonkotsu ramen, but it wasn't overly salty or greasy — the flavor leaned a bit more Korean!!! It's the perfect flavor for people who are on the fence about tonkotsu ramen to get into it!!! They say they simmer the broth themselves for 14 hours using pork bones and chicken, so this isn't just ramen, it's basically a tonic!!!!

The chashu (braised pork belly) was so tender it just fell apart along the grain the moment my chopsticks touched it!! There was none of that distinct gamey pork smell either, so it was really good to eat with my kid — my daughter said the meat tasted like galbi and asked for more, so in the end we added extra chashu and ate it neatly alongside the tamago-bap like a side dish, haha.

Why is the soft-boiled egg soaking in the ramen so nutty and delicious, ugh, my heart ♡ Eating about half the ramen, then popping the yolk and eating it together, was a real treat!! And the chewy texture of the wood ear mushrooms was truly a stroke of genius. It felt like a thoroughly calculated bowl of ramen — not a single ingredient felt out of place, everything worked together to make it even tastier.
Motsu ramen with fried makchang topping
Motsu Ramen

Motsu ramen (₩12,000) is gyedan ramen with fried makchang (beef intestine) added on top. The fried makchang topping is crispy and chewy!!! It has real bite. At first I figured adding fried makchang as a topping would make the ramen even greasier, so I just ordered the plain gyedan ramen. But one bite in, I changed my mind, haha. This combo suited me so well!! Whoever discovered this combo, who are you!! Haha. It takes the ramen's flavor up another notch!!! Next time I'm ordering the motsu ramen, haha.
Is the tamago-bap worth ordering?
Tamago-bap

Tamago-bap (₩3,000) is rice piled high with thin shredded egg (gyeranjidan). Making egg sheets that thin usually means they dry out and turn dry and flaky pretty quickly, but Gyedan Ramen's tamago-bap was so moist and full of flavor. There's a generous amount of meat and scallions mixed in with the egg. It's delicious eaten plain, and mixed into the ramen broth it's an even better combo ♡
My daughter didn't even look at any screens, totally focused on the ramen, haha. It was so good she didn't even think about watching YouTube!!

Is Gyedan Ramen a good Ilsan ramen restaurant with kids?
I get it now, why Gyedan Ramen keeps coming up whenever people talk about Japanese ramen. The tonkotsu broth is rich but never greasy or heavy, plus the tender chashu, the moist tamago-bap, and that makchang topping that matched so well!! Best of all, my daughter gave it a thumbs up, which made it even better. If you love ramen, if you're looking for a family meal out, or if you're hunting for good food in Ilsan, I strongly recommend this place ♡
