Yun Ujae Shabu Kalguksu is always busy no matter what time you go, so they've really nailed the waiting system.

Do this and the food comes out the moment you sit down haha. Note: you need to write the number of broths as a 'count' matching your party size.


There are simple stools at the entrance, but there's also a separate waiting room set up in one corner of the store. It's much more comfortable, so wait there.

Inside Yun Ujae Shabu Kalguksu: 4 private rooms
Yun Ujae Shabu Kalguksu has a really spacious interior — but the turnover rate is just as good. There were about 10 teams ahead of me that day, and I got in after only about 10 minutes. You'd think a place this full would be loud, but surprisingly I could hear my companions just fine haha.


There are also 4 private rooms like this, each with two 4-person tables inside. Since the menu is gentle, warm shabu-shabu and the private rooms are so clean, I saw a lot of family groups visiting with their parents.

Even though this is a well-known restaurant a bit out of the way, the prices are very reasonable. Looking at it now, I realize the spicy broth is actually their signature (oops).


Since I'd already ordered while waiting, the table setting came together quickly the moment I sat down. Kimchi is brought out first.

Shabu kalguksu, 11,500 won per person: the flat noodle wrap is the standout
The shabu kalguksu is ₩11,500 per person, made up of sirloin (70g) + vegetables and mushrooms + house-made noodles + fried rice — pretty reasonable for including meat, right? 👍 You can also switch the noodles to flat kalguksu, and when I did they thoughtfully brought out half and half haha.




The clear broth, made with anchovy and kelp, was fragrant with minari (water celery) and mushrooms. There was so much of it that the vegetables alone could fill you up — and eating a ton of vegetables never comes with any guilt, right haha. The flat kalguksu, which I tried for the first time, was a real specialty. Normally you add noodles after finishing the shabu-shabu, but here they gave me the flat noodles along with the meat, which confused me at first — turns out they're meant to be used as a wrap ❗️
Wrapping the kalguksu noodle around minari, mushrooms, and meat, then taking a big bite — 🥹 the perfect balance of fiber, protein, and carbs.

The 'house-made' kalguksu noodles at Yun Ujae Shabu Kalguksu aim for something between the springy bounce of hand-cut noodles and the heavy, chewy texture of sanuki udon.
Since the noodles were as wide and thick as lasagna sheets, I expected them to be so chewy they'd leave teeth marks. Instead they were softer and had a slightly crumbly bite. It's definitely a texture you won't find anywhere else.
Crispy seafood pajeon, 16,000 won
The crispy seafood pajeon is ₩16,000. It was loaded with king prawns and squid, and the batter was so thin it made me wonder how they even pulled it off — probably Yun Ujae Shabu Kalguksu's own technique. Thanks to that, I could finish the whole pancake without getting sick of it, and it really was as crispy ('bbajak-bbajak') as the name suggests. A high-quality pajeon where the ingredients really shone.



And of course I finished it off with the 'K-dessert' fried rice haha. No matter how full I am, I can never skip the fried rice... I added an egg, which made it even softer and tastier ><
