After work, it's always the same struggle — what am I eating for dinner tonight? Haha. Especially on days when I crave meat, it's a toss-up between makchang (grilled pork intestine) and pork belly, but this time I found a place where I could have both! It's Bulmak Yeolsam Sajik in Sajik-dong, Busan ✨ I'd heard the name many times before but never had the chance to visit, until I finally made it happen for a dinner appointment.

Where is Bulmak Yeolsam Sajik and how do you get there?
Bulmak Yeolsam Sajik is located at 3-1 Seoksabuk-ro, 1st floor, in Sajik-dong, Dongnae-gu, Busan — the neighborhood known for Sajik Baseball Stadium ⚾ The area is famous for having tons of grilled meat restaurants, so first-timers might get a little confused, but if you just look for the sign it's not too hard to find!

The sign is easy to spot even from a distance, so I found it quickly while walking through the alley! For parking, if you park at Myeongseong parking lot located in the alley to the right, you get 1 hour of free parking support. (Extra charge: ₩3,000 per 60 minutes / max ₩20,000)


Inside Bulmak Yeolsam Sajik: interior and atmosphere
Walking inside, the tables were spaced generously so we could chat comfortably without worrying about the next table. There were spots that seemed good for coworkers grabbing a casual soju after work, and I also saw families dining, which gave me the impression this is a neighborhood makchang spot in Sajik-dong that welcomes all kinds of customers.


For a tastier way to eat raw makchang, gochujang sauce, doenjang sauce, and barbecue sauce all work well, but pairing it with geotjeori (fresh kimchi salad), ttaengcho ramyeon, or naengmyeon (cold noodles) is also great. Bulmak Yeolsam features 48-hour aged raw makchang and thick Korean raw pork belly as its signature dishes! I heard the brand has quite a few branches spread across the country, and hearing that you can't go wrong at any location or with any dish gave me a real sense of trust haha. Centered on makchang and pork belly, there was also a solid variety of other cuts and meal menu items, making it easy to pick whatever you like without much worry — a menu lineup that's uniquely Bulmak Yeolsam's own here in Sajik-dong, Busan.

The basic side dishes and table setting came out neatly arranged, and while grilling the meat we were generously supplied with lettuce wraps and basic sauces to go with it!


Thick fresh pork belly: grill it low and slow
The raw pork belly at Bulmak Yeolsam Sajik is on the thicker side, and I was told that flipping it slowly rather than rushing helps keep more of the juices in. Hearing this kind of detailed tip in person made the experience feel much more worthwhile than just ordering meat and eating it 🥰



The pork belly had real thickness, so even one piece felt satisfying!

Cooking it slowly on the grill, the outside turned golden brown while the inside stayed moist, and the juices burst out with every bite — genuinely impressive. The fat wasn't excessive, and the pork's natural savory flavor came through strongly, so alternating with the makchang, neither one got tiring and we kept enjoying both 😍

The staff shared a tip that makchang should go on the grill right when it's freshly heated, so it comes out savory without any off smell — so I tried grilling it in that order as instructed.


Maybe because of the 48-hour aging process, there was no off smell at all, and the more I chewed, the more savory juice came out! The outside cooked up crispy while the inside stayed chewy, so even people who usually hesitate because of makchang's characteristic smell could probably enjoy this without worry. Dipping it lightly in makjang (dipping sauce) brought out even more savory flavor, so my chopsticks kept going back for more haha.

The ttaengcho ramyeon (green chili instant noodles) we ordered last was the real highlight of the day! We ordered it right when we started craving something hot and spicy after finishing the meat, and the sharp heat of the cheongyang chili peppers came through fiercely without feeling heavy, leaving a clean, refreshing broth flavor 🌶️ It felt like it cut right through the greasiness of the meat, making it the perfect finishing course, and the noodles were cooked to a nice chewy texture too, so we finished the broth completely without leaving a drop.
