From outside, the tiled-roof eaves and wood-accented entrance catch your eye first, giving off more of a traditional Korean restaurant vibe than a typical BBQ joint. The sign reads Sanseong Meat Shop in large letters, so it wasn't hard to find once I got close.

The interior was bigger than I expected. Regular tables line the space with ventilation equipment at each one — a typical BBQ restaurant layout — but the overall color scheme and interior felt more put-together than usual. Several tables were already dining when I arrived, but it didn't feel cramped. Best of all, there's a separate room-style space further inside, done up with floor seating, which made for a more relaxed way to sit and eat.

Sanseong Meat Shop's banchan (side dishes) came in a surprisingly wide variety. Green onion strips, muk (jelly), pickles, baek-kimchi (white kimchi), fish cake and lettuce wraps all came out, along with small dishes of different sauces meant to pair with specific cuts of meat — more effort than your average Dongnae pork belly table. A warm soup arrived too, so the table was already fairly packed before we even started grilling.

What I ordered that day was the Pork Set A. Nuruk pork neck, pork belly and that day's special cut, gabrisal, arrived neatly arranged on a long plate, and the color of the meat alone looked clean. The pork belly had clearly defined layers of fat and lean meat, and the nuruk pork neck was cut thick, promising plenty of juice even before it hit the grill.



How the staff grill the pork at your table
What was especially convenient at Sanseong Meat Shop was, again, that staff grilled the meat themselves. After laying the thick cuts on the pan, they kept checking the doneness, turning each piece carefully, cutting it into bite-sized pieces and timing everything for the best moment to eat. I could just sit there, nibble on side dishes, and wait — which was genuinely relaxing. Thick cuts like pork neck especially tend to burn outside while staying underdone inside if you grill them yourself, and here that worry simply didn't exist.






Which sauce goes with which cut
First, the nuruk pork neck came off the grill thick, browned nicely outside while still holding juice inside, letting the neck's mild, clean flavor really come through. Dipping it lightly in sea mustard salt kept the saltiness from being overwhelming while lifting the meat's flavor — a combination I liked a lot. The pork belly had that unmistakable savoriness from the fat, and rather than just dipping it in salt, the way it came with green onion mayo, truffle oil and herring roe was unusual. The soft green onion mayo carried a faint hint of truffle, and the salty pop of herring roe on top made a familiar cut of pork belly taste completely different. Finally, the gabrisal had a chewy yet tender texture, and topping it with nuruk gochujang pickles and baek-kimchi cut the richness while adding a tangy note that worked really well. Since each cut came with a different pairing, there was fun in eating one piece at a time, and that's part of what made this feel different from a typical Dongnae pork belly restaurant.

After we'd eaten a good amount of meat, the staff used the same grill pan the meat had been cooked on to make an egg roll. I expected the usual BBQ-restaurant egg — beaten egg poured around the edge of the pan and cooked flat — but here they rolled it into an actual egg roll shape, which was fun to watch. Eating it warm, piece by piece, as we were finishing up the meat, it was soft and savory, and a nice little breather between bites of meat.




Is the milmyeon finish worth it?
We finished with mil-myeon (cold wheat noodles), and honestly, this dish ended up being exactly my type. Dessert-course mil-myeon or naengmyeon at BBQ restaurants tends to come with a punchy, salty broth, but Sanseong Meat Shop's version had a relatively clean, not-too-strong broth that I appreciated. Having already eaten a fair amount of pork belly and neck, if the noodles had been too sweet or salty I probably would've only managed a few bites — but here, I kept eating without any hesitation. The cold, clean broth also did a great job clearing out the greasy aftertaste from the meat, and slurping down the noodles made for a satisfying end to the meal.

Sanseong Meat Shop Dongnae Main Branch was solid on the meat alone, but what I appreciated most was how it made the whole process of eating BBQ easier — a real find for pork belly in Dongnae. With staff carefully grilling the nuruk pork neck, pork belly and gabrisal, there was no risk of overcooking anything, and we could just talk and eat comfortably with our group. On top of that, each cut came with its own recommended pairing — sea mustard salt for the neck, green onion mayo with truffle oil and herring roe for the belly, and nuruk gochujang pickles with baek-kimchi for the gabrisal — which made for more fun eating than your average pork belly restaurant. The banchan spread was varied too, and the egg roll rolled right on the grill toward the end was a nice service touch. Above all, the final mil-myeon was clean and not too salty, which personally hit my exact taste. The interior is fairly spacious with a separate room, so it seems like a good pick for drinks with friends, a family gathering, or a slightly more relaxed work dinner. If you want a proper meal in Dongnae without having to worry about grilling it yourself, this is a pork belly restaurant worth going back to.
