Ghee butter steak and bone marrow pasta in Songdo, Incheon: Salt Steak

There was a furniture fair at Songdo Convensia recently, and after wandering around I had a really upscale lunch at Salt Steak in Songdo, Incheon 💕

Both the visuals and the taste were totally different from any restaurant I knew!! This place has even been on SBS's Live Today, so you can expect a lot 👍 ✔️I'd recommend booking on Naver ahead of time.

It's located inside Songdo Central Park Prugio City, so it wasn't hard to find at all, and it's in a great spot for a stroll through the park before or after your meal!

What's the interior like?

Inside it's a classic yet warm, antique-feeling combination of green 💚 and brown 🤎!! The whole vibe suited the Christmas season perfectly 🎄

So many photo spots that I couldn't stop clicking away 📸 With the warm orange lighting, the whole place felt even cozier and more European‼️

What we ordered and how much it cost

Even the menu felt full of mood 🦢 Songdo Salt Steak has all kinds of steaks 🥩, pastas 🍝, and salads 🥗, but we went with the signature items: the ghee butter petit tender at ₩57,000, the bone marrow conchiglioni at ₩32,000, and a perilla oil carrot rapée!!

✔️Review event — complimentary perilla oil carrot rapée 🥕 The first thing that catches your eye as you sit down is the plate and cutlery set on a checkered tablecloth 🍽️ The colors were lovely and everything was set up with real care. Even the wet wipe on the plate said 'SALT' — nice touch.

🥖 Pre-meal bread

Even the bread that came out first was different from the usual~ The butter was lemon butter!!🍋 First time trying lemon butter, and slathering it on was so bright and nutty at once 😆 A nice light bite while waiting for the mains :-)

Bone Marrow Conchiglioni, ₩32,000

The visuals alone are overwhelming‼️ Bone marrow is the soft, fatty part inside a cow's bone, and when it's roasted it apparently gets buttery and rich in flavor — they say it's even called 'God's butter' 🧈

The owner scraped out the marrow and mixed it in at the table himself while explaining everything. He said the pasta sauce is a Korean beef bone broth simmered for two whole days, then simmered again separately with wagyu sirloin added in 🫢😮 So much care went into this pasta 😍

Shake it, shake it! You just scoop the meat and sauce into the conchiglioni shells and eat! Let's try it ㅏㅏㅏㅏㅏㅏ😲

One bite in and — deep, incredible flavor!!!!!

My friend and I looked at each other, both wide-eyed at the same moment!! What is this????? Never tasted anything like it — is this even legal???💕 Because the pasta is shell-shaped, you get the full rich flavor of the meat and sauce packed into a single bite!! Regular pasta noodles just wouldn't have had this magic. And a carbonara sauce wouldn't have worked either — no charm at all!! Bone Marrow Conchiglioni is a perfect pasta all on its own. The white ragù sauce had scallions and chili in it so it wasn't greasy at all, and there were even nuts in there for texture!! I scraped the plate clean...😍

Ghee Butter Petit Tender, ₩57,000

Songdo Salt Steak's other signature dish! Let's start with the owner's ghee butter performance~~ For the ghee butter petit tender, a soft, low-fat cut is seared first, then finished with sizzling ghee butter poured over at over 300°C to add richness! He pours it evenly all over as it cooks 🥩

Finally, he seasons it with Maldon salt and pepper 🧂 One bite in and the juices came flooding out with deep flavor — steak never disappoints, does it 😂

And the baguette that came alongside it quietly steals the show 🥖 You cut the steak into bite-size pieces and pile it onto the baguette however you like~~

And right on cue, the perilla oil carrot rapée and radish pickles arrived too! Meat, well-roasted garlic, herbs, and carrot rapée all piled onto the baguette! 🥖🥩🧄🌿🥕

There's no way this combination could taste bad 😍😋 The perilla oil carrot rapée was also new to me — who knew carrot and perilla oil could pair so well!! The thinly sliced carrots with that nutty perilla aroma just woke my appetite right up. And the tangy bite was a real treat!! The ghee butter steak, the bone marrow pasta, the perilla oil carrot rapée — every single combination was something new, and I kept saying 'this is so good' the whole meal at Songdo Salt Steak 🥩 The owner's performance was a treat for the eyes and the palate alike~~ With the atmosphere on top of it all, this is a place I'd love to come back to for a special occasion 🤎
