Jinju Korean BBQ for a family-meeting dinner: three cuts at Psyche

Inside Psyche: private rooms you can't see into from the street
From the entrance it didn't feel like a typical Korean BBQ place at all. It's got a restaurant-like interior, and you can't see inside from the street, which only made me more curious.

Since the staff grill all the meat for you, it's so convenient and lets you enjoy a relaxed, more delicious meal. Perfect for a clean, cozy dinner!

The main menu has anchangsal (skirt steak), tosisal (hanging tender), and jebichuri (outside skirt). I wanted to try them all, so I ordered one serving of each — three servings total. They're currently running a review event and a birthday event too, so make sure to get the freebie after writing a review!
Side dishes and appetizers served in brass bowls

Apparently Psyche uses brass tableware for almost 100% of its dishes. Even in Seoul, that's something you'd only find at high-end spots in Cheongdam or Gangnam and a handful of others — and I hear it's just as rare to find a restaurant using nearly all brass bowls here in Jinju.


It really shows Psyche's intention to treat every guest like royalty. The namul (seasoned greens) rotate with the season. *Namul selection changes seasonally.
For jangajji (pickles), there's chorogi (Chinese artichoke), gungchae, and pickled garlic, though the lineup can change depending on the season. The meat sauces are made with turmeric shiitake sun-dried salt, whole grain mustard, and wasabi.



The appetizer was a grilled salmon salad, and it was really soft and delicious. The side dishes were spot-on for my taste too.
How do anchangsal, tosisal and jebichuri differ?
Tosisal, also called "angeomi," comes from only about 550g per cow, making it one of the most valuable cuts. It doesn't have much marbling, but its tender sinew keeps the protein soft, and you get a unique flavor where the savory meatiness meets a rich umami.

Anchangsal yields only 1.2–1.8kg per cow, making it a rare, high-value cut ranked alongside striploin as top-grade. It's the thin muscle layer running across the diaphragm, just inside the ribs, and reportedly the most popular cut of all. Anchangsal is tender enough that even babies can eat it easily.
Jebichuri has the least fat of the three cuts, giving it the best texture. It's juicy with a strong meaty aroma, tasting tender and savory, and because it has little intramuscular fat, you get a clean, light flavor.





Grilled just right and eaten right away, it melts in your mouth.



A happy feast full of juicy goodness 🥄
Three servings disappeared in no time 🤣 To ease my disappointment, I ordered the seafood doenjang stew.
Seafood doenjang stew (10,000 won) and yellow rice
It came packed with ingredients, plenty for two people to share. The seafood aroma was strong too, giving it that spicy, rich doenjang-soup feel.
The rice is cooked with water steeped in safflower, though these days they're grinding in golden hibiscus leaf powder as well. That's what gives the rice its yellow color.
Safflower is said to help blood circulation and break up stagnant blood, while golden hibiscus leaf powder is a plant-based collagen certified by Korea's Ministry of Food and Drug Safety.
