I'd been craving something spicy and calming lately, so I made my way to Gimcheongja Maeun Galbijjim Seohyeon Station branch. If you're driving, just a heads up — you'll need to use the mechanical parking system 🚗




Just looking at the waiting chairs out front tells you this is a proven local favorite — the kind of place where the taste alone is worth the wait.

The menu is neatly laid out with beef short rib jjim, pork rib jjim, and a pork rib jjim set — but here's an important piece of info. Visit between 11 a.m. and 2 p.m. on a weekday and you get free rice and steamed egg custard! We ordered the beef short rib jjim, and it still applied. I was already planning to add egg custard separately since it's basically essential with this dish, so getting it free was a nice way to start the meal.

Side dishes that tame the spice
Before the galbijjim arrives, a solid lineup of side dishes is set first. Crunchy white bean sprouts that pair perfectly with the spicy jjim, a savory-sweet macaroni-mayo salad you keep reaching for, and egg-battered sausages fried up golden, tasting just like the nostalgic classic.


A secret weapon even for people who can't handle spicy food. Get a refill of the macaroni and sausage sides to eat alongside, and the heat gets perfectly neutralized.

The sauce is red-pepper-flake heat, not capsaicin heat
What I loved about Gimcheongja's galbijjim is that it's not the harsh, artificial capsaicin heat or the flat spiciness from seasoning — it's a clean, sharp spiciness that's unmistakably from red pepper flakes, and delicious with it. The sauce itself is deep and rich, so adding fried rice is basically mandatory.

Even though it's the free side dish, the egg custard has zero fishy taste and a fluffy, soft texture — a must-have side that completely calms the spice.

Adding the freshly fried, still-steaming gimmari (fried seaweed rolls) on top was a treat too — dipping them into the spicy galbijjim sauce was a nice little extra.



Mild spice, but spicier than Shin Ramyeon — the beef short rib jjim
You can choose mild, medium, or spicy for the galbijjim, and the ribs are braised so tender the meat falls right off the bone, with plenty of rice cake pieces soaked chewy with sauce and glass noodles that soaked up all the flavor too.

We ordered mild, and it still felt spicier than Shin Ramyeon! I do tend to like spicy food, so for my palate it was just the right kind of delicious spicy — the heat lingers subtly the more you eat, and it actually cuts through the richness of the ribs really well, which I liked about Gimcheongja's galbijjim. And most importantly, with rib jjim the meat quality really matters — here the sauce is properly soaked all the way through, and the meat is cooked so tender that big chunks just fall right off.
